A day late, oops! My brain is mush lately. It must be all the hot glue I'm sniffing!
So....let's share April Fools recipes this week. Recipes that either look like something completely different (meatloaf made to look like a cake, tacos that are actually filled with dessert items, etc.), or, ways you sneak foods into recipes to fool your family into eating something they won't normally eat (pureed veggies in hamburger, etc.).

Because I'm into babyfood these days....
Baby "Cereal" PancakesIngredients:1 cup whole wheat flour
1/2 cup baby barley cereal (or other baby cereal)
1 cup formula (or another liquid such as milk)
1/2 cup mashed banana (or fruit of your choice)
1 tbs melted margarine or butter (unsalted type)
3 egg yolks
1/2 cup baby oatmeal
apple juice (about 1/2 cup) Use water if you prefer
Directions:Add cinnamon, nutmeg, dash of vanilla or other flavorings if you wish.
Mix all ingredients together and add enough juice to make pancake consistency.
Cook on cook top in frying pan as with "regular" pancakes.
Broccoli & Cheddar Cheese Nuggets Ingredients:1 16-oz Package frozen broccoli, cooked, drained, and chopped1 cup Seasoned bread crumbs (you could try using baby cereal if you want, we know it works well with "baby meatballs")
1 ? cups Shredded cheddar cheese (please use real cheese and not a "processed cheese food" product. Try tomato & basil cheddar.)3 Large eggs - Most pediatricians say it's ok to use whole egg in a baked good when baby is over 8-9 months old without allergies. We would recommend that you substitute 5 egg yolks for the whole eggs if serving this to those under 1 yr. Ask YOUR pediatrician.Directions:1. Heat oven to 375 and lightly coat a baking sheet with olive oil and set aside.
2. Combine all remaining ingredients and mix well.*Add seasonings if you like - garlic powder, pepper, extra basil & oregano for example3. Shape mixture into nuggets or fun shapes such as squares or squigglies etc..and place on baking tray. Bake for 20 to 25 minutes, turn nuggets over after 15 minutes. Serve warm Suitable for those who have had the ingredients and for those who can handle texture and mash foods with their gums. Great for Moms & Dad too!

Lemon-Basil Orzotto
Directions
In a heavy-bottomed medium saucepan, heat the olive oil over medium-high heat. Add the onion and saute until fragrant and translucent. Add the orzo and toast for 2 minutes, stirring occasionally. Add the wine and cook until absorbed.
Gradually add the chicken stock, stirring frequently. Bring to a simmer, lower the heat, and cover. Cook for 8 to 10 minutes, until the liquid is almost absorbed and orzo is tender. Remove from the heat.
Stir in peas, Parmesan, fresh basil, lemon zest, heavy cream, and lemon juice. Season the orzo with salt and pepper, to taste, and serve.
Better than ever egg salad
Ingredients:
3 boiled eggs
1 ounce pureed butternut squash
2 ounces pureed cauliflower
1 tsp yellow mustard
1/2-1 tbsp mayo
Seasonings to taste
Directions:
Cut eggs in half - remove yolk and place in bowl. Dice up the egg whites to your desired size and set aside. Mash the egg yolks with a fork. Mix in the butternut squash and cauliflower puree. Then add in the mustard and mayo (add amount of mayo to get your desired consistency - thicker vs. creamier). Add the diced egg whites in and mix. Serve as desired (by itself, on a sandwich, etc) and season to taste.
Verdict: This was SUPER yummy. I couldn't even tell the veggies were mixed in. I came up with this idea myself and feel really proud of it.
Definitely doing this again.
Not yo' mama's grilled cheese
Ingredients:
2 slices of bread
1 ounce butternut squash puree
1 slice of cheese
butter/cooking spray
Directions:
Spread butternut squash puree on one slice of bread. Put cheese on top. Top with other slice of bread. Cook as you normally would any grilled cheese. Enjoy.
Verdict: G loved it and I thought it was very good as well. DH thought it tasted funny, but he still ate it. I thought it made the cheese taste creamier. I'll do this again for sure.
