What's for dinner ladies?

I have no idea what to make.  Our dinner last night was delicious!  Grilled chicken on baby spinach with almonds, avocado and granny smith apples with a lime vinaigrette .

I need ideas.

Lazy night...I had spinach pie from Trader Joe's (just okay), and Marcus had a broccoli-mushroom scramble (don't tell him it had veggies in it), a banana, and a clemetine.

  • Pasta with roasted asparagus, roasted red peppers, pine nuts, mozz, and dressing.  It's modified from Fresh magazine from Hannaford.  I tweaked the dressing (chipotle ranch, cream, champagne dressing, lemon juice) and then didn't have feta so used mozzarella.  It's pretty tasty!

  • Leftover party food. Ugh, my body hates me with going off the diet for 3 days and not exercising for 4. Tomorrow, tomorrow I've got to get back on it or I think my body will go on strike
  • Jake and I made pizza - DH & I had it w/ Caesar salads and Jake had it w/ sliced strawberries on the side.

  • I made tomato sauce w/ onions, portabella mushrooms, chicken sausage and fresh basil. I'm trying to use up a bunch of staples we have in the house that have been collecting in the pantry & freezer, so it's been a creative week!
