Tasty Tuesday

Not much going on here. I haven't cooked in like 4 days. Zig made a huge batch of chili so we've been pretty much living off of that. I'm trying to figure out what to make for dinner tonight. I want something i can make in bulk (or at least cover a few dinners this week) that is tasty, easy and fairly healthy.

 Any suggestions?

  • I'm making enchiladas for dinner tomorrow night (we have friends coming over).  

    This morning's project was making vanilla sugar!  We got the ice cream maker attachment for my kitchenaid mixer- and one of Alton Brown's vanilla ice cream recipes calls for vanilla sugar. I happened to have some vanilla beans (thanks to an impulse buy at Trader Joe's a while ago) and I sliced open the bean lengthwise (my outer science geek really wanted to say longitudinally or sagitally), scraped out the seeds to use in the ice cream itself (and put those in some cream in the fridge) and put the shell of the beans in about 2 lbs of sugar.   I don't think the vanilla beans were all that expensive, and vanilla sugar is definitely expensive!  Besides the ice cream, I plan to use it for baking. I feel like Martha.

    I've got nothing to share. I haven't made anything new in a while. Tonight is a quick dinner of Kielbasa, au gratin potatoes and some veggie. I haven't had time to look thru some of my cookbooks or recipe box to buy stuff for something new.

  • It's so stormy out right now, and we had terrible storms all through the night.  It's gross.  Kind of seems like a crockpot day to me.  Maybe I'll run to the store and grab some sausages and throw them in for a sausage pot roast, since we'll be out looking at the "final two" houses we're deciding between with our parents tonight.  I made a sausage pot roast the other week and it turned out sooooo good :)

  • Last night was too icky to go to the barn, so I cooked for the first time in...days.  I didn't really have a recipe, but I wanted it to be healthy and "clean."  I think  you could make it in bulk, or at least enough for a few meals. I'll call it Lemon Garlic Chicken with Asparagus :)  Kind of self explanatory, but here's what I did:

    Cook 2 boneless, skinless chicken breasts in a lg. skillet

    Snap the ends off fresh asparagus stalks and discard, then snap the stalks into 3 equal length pieces. I used about 16 stalks.

    Mince a clove(s) of garlic and sprinkle onto the chicken.

    Push the chicken to the outer edge of the skillet and place the asparagus pieces into the center.

    Put a small pat of butter on the asparagus (it will melt over the pieces.)

    Squirt a dash of lemon juice over the chicken and asparagus. 

    Cover and allow the asparagus to cook through and the garlic/lemon flavors to develop. About 15 minutes on med/low heat or longer if you like the asparagus softer.

    I ate mine with a little bit of shredded cheese on top.  Quick and easy and good for you!  :)

  • You could make a quiche or two!  They're extremely easy and keep pretty well.  How long they'll last is how much you eat in one sitting...I know my husband and I can go through half a quiche in one night, but we eat a lot lol.  This recipe is for ham and broccoli, but you could really put anything in it that you want.  The only change I make to this recipe is that I use fresh broccoli.

    1 Pillsbury? refrigerated pie crust, softened as directed on box 1 1/2 cups cubed cooked ham 1 1/2 cups shredded Swiss cheese 1 cup frozen broccoli florets, thawed, well drained on paper towel 4 eggs 1 cup milk 1/2 teaspoon salt 1/2 teaspoon dry ground mustard 1/2 teaspoon ground black pepper

    Directions

    1. Heat oven to 375 degrees F. Place pie crust in 9-inch glass pie pan as directed on box for One-Crust Filled Pie.
    2. Layer ham, cheese and broccoli in crust-lined pan. In medium bowl, beat eggs and milk with fork. Stir in remaining ingredients. Pour over broccoli.
    3. Bake 35 to 45 minutes or until knife inserted in center comes out clean. Let stand 5 to 10 minutes before serving.

    I want to make a quiche and then bring a piece with me to work in the morning for breakfast. But I think I might try a crustless one....save some calories! I just need to remember to buy stuff to put in it!

     I would love the recipe for a sausage pot roast!   I'm using my crockpot a lot more since DH and I have weird schedules now and would love something that's not just the same old same old for me!  Pretty please? :-)

  • last night I made chicken parmesan. We'll probably eat left overs today. Then tomorrow I'm making boneless baked ribs (Betty crocker recipe)

  • Sigh. Sadly I'm still grossed out by raw meat, and not doing much cooking...which stinks because I am craving chili!!

    Tonight's dinner is probably going to be ham and cheese scrambled eggs and potato bread toast....easy and not too yucky to cook!

  • I'm making this because it's way healthier than mac and cheese and I have some sausage I need to use up:

     

    Pizza Macaroni Bake

     

    Ingredients

    • 1/2 pound bulk pork sausage
    • 1/4 cup chopped green pepper
    • 2 tablespoons chopped onion
    • 1/2 cup elbow macaroni, cooked and drained
    • 1 can (8 ounces) Hunt?s? Tomato Sauce
    • 4 tablespoons grated Parmesan cheese, divided
    • 2 tablespoons water
    • 1/4 teaspoon dried oregano
    • Dash pepper

    Directions

    • In a skillet, cook sausage, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in the macaroni, tomato sauce, 2 tablespoons Parmesan cheese, water, oregano and pepper.
    • Transfer to a lightly greased 1-qt. baking dish; sprinkle with remaining cheese. Cover and bake at 350? for 25-30 minutes or until liquid is absorbed and casserole is heated through. Yield: 2 servings.
