I am hosting brunch for some of DH's relatives this weekend and I'm looking for something new and exciting to make. My go-to recipes (hash brown casserole, red pepper and cheese egg bake and orange french toast) seem so heavy. Plus, I'm tired of eating them.
Does anyone have any good brunch recipes to share?
Thanks!
Re: favorite brunch recipes?
My go to's that get good reviews are:
Paula Deen's French Toast Casserole with maple syrup: http://www.foodnetwork.com/recipes/paula-deen/baked-french-toast-casserole-with-maple-syrup-recipe2/index.html
Barefoot Contessa's Smoked Salmon Fritatta: http://www.foodnetwork.com/recipes/ina-garten/smoked-salmon-frittata-recipe/index.html
I also usually do fruit, mini-muffins and a spinach fritatta.
i've made Lemon Blueberry Muffins for DH, my fam, and co-workers - they are always a hit. i've also made them with raspberries or cranberries.
these have been a hit with the RI nesties:
Cheddar Vegetable and Sausage Strata
Creme Brulee French Toast with Drunken Strawberries
My mom made this for brunch for us once, and it was amazing. She also made some sort of strawberry sauce which was a nice complement.
This is my favorite brunch recipe:

It takes a while to make (esp if you decide to make the crust rather than use a prefab crust), but it's super tasty! GL!
I know it is totally 1970s, but I love the bisquick quiches. And they are so easy to make the night before and taste great cold, room temperature or hot out of the oven.
I made this egg souffle roll for Christmas brunch and it was very yummy.
In addition to whatever hot breakfast item I serve at brunch, I usually round it out with homemade muffins or quick bread, bagels, cream cheese and lox and fresh fruit and greek yogurt Back in my pre-children days, I always served mimosas as well.
I like to make frittatas. I usually do a vegetarian one and a meat one and I use the base recipe from Gale Gand and use whatever filling strikes me. http://passionatepastry.blogspot.com/2010/12/breakfast-frittata-and-gutsy-cooks.html
Last time I made one, I used ham, asparagus and swiss and it went over very well.
