Made 2 Nestie-recommended recipes this past week!

Taco Mac - YUM. Except I doubled the sauce recipe and it still wasn't enough kick for me. I guess it depends on what kind of taco seasoning you use, b/c I am not huge into spicy food but it just fell a little bland, so I'd kick it up a bit more next time I make it.

Erin's Marcella Hazan recipe - the 3 ingredient sauce one. YUM YUM YUM. This was delicious. With some hot italian sausage it would just rock. My husband likes things saucier so I will probably have to double this next time so he has more sauce, but I absolutely LOVED it. No metallic or spaghetti-o taste here, just rich delicious yum. And we ate the onion afterward too b/c it was just too good not to!

DH made the Taco Mac last night.  It's pretty good!  (DS did not even try it though) Ours had a decent kick to it; we used a full package of the McCormick's taco seasoning.  Next time, I would definitely prefer to have an onion & a pepper in it like others had suggested.  DH didn't feel like chopping them up, so he skipped those.  Very good though, and it didn't take too long to make either.

ETA: I'm having the leftovers for lunch right now; still tastes good!

  • The seasoning on the taco mac seems difficult to get right. I added the right amount of seasoning the first time I made it, but it needed more vegetables. So I kept everything else the same and doubled the tomatoes the second time around. Even better and still tasty as leftovers.

  • I made the taco mac the other night too! Big hit at out house! I used a pkg. of taco seasoning and added corn and olives. Oh and I used elbow macaroni...Onion and pepper would be great for next time! The leftovers have been great for lunches and Zoe even took some to school so if Zoe likes it enough to bring to school, that says a lot! HA!
