Answering this question, what is the minimum amount of night you would recommend someone stays there?
Any hotel recommendations? We would want to be very close or in the French Quarter

I would stay at least 3 nights. The last time we went we stayed at the Maison Dupuy and it was really nice. It was still in the French Quarter but not right in the heart of the noise.

I don't remember where we stayed, but it was like a block from the French Quarter.

We went a couple years ago and stayed in the Place d'Armes, which is in the French Quarter, a very short walk from Cafe du Monde. Definitely recommend: http://www.placedarmes.com/
I lived there when I was small and DH and I go annually. My bio has what we did for our first anniversary trip.
As far as hotels go, don't book directly with a hotel. DH always uses priceline. He searches for a 4 star hotel in the French Quarter (I think you could also get away with the Central Business District; it's a little more of a walk but still a good area). We've stayed at the Omni Royal for around $60 a night. We've never had a bad hotel experience using Priceline and searching in the French Quarter.
I hope you like to eat because that's all you'll want to do. Last trip we went to Galatoire's for our fancy meal and it was awesome. Personally, I prefer Brennan's or Commander's Palace but you can't go wrong with any of those. If you choose Brennan's you have to go for Sunday brunch. Best 3 hours in my entire life!! We finally made it to the Swizzle Stick Bar and it was the best bar experience ever...fantastic drinks and great food. They're affliated with Commander's Palace so if you want to try both but don't want to spend all the $ for CP go there.
Not all food in NOLA is expensive. You should go to Domilise's for a po-boy. It's going to be a cab ride over from the Quarter. All the NOLA locals and famous people go there...even Anthony Bourdain has been and loved it. Complete hole in the wall type place. Of course, beignets at Cafe du Monde are a must...I think an order (you order by how many "orders" you want; each is 3 beignets) is about $2 now. Sit, enjoy some cafe au lait, and people watch when your feet get tired. Also great after a night of drinking.
Speaking of drinking, if you want to experience the actual NOLA, don't stick around Bourbon St. Eat at the Bourbon House (yummy and one of our favs) and then go somewhere else for the night.
Sleep late in the mornings because every night there are dozens of fantastic musicians playing live. Frenchman street is the best bet for most nights. DBA is awesome and across the street is the Spotted Cat. The New Orleans Jazz Vipers play every Monday night and they don't use mics...very authentic and great group. Tuesday nights you can catch Rebirth Brass Band at the Maple Leaf. They're one of the premiere brass bands and have been around for over 25 years. They never start on time so if you plan to see them they'll be at least an hour late. Thursday night you absolutely have to go to Vaughns. Take a cab because it's next to the Quarter but in an area called Marigny...too far to walk. You'll hear Kermit Ruffins live in an absolute crappy looking place (I swear I thought it was going to fall down on top of us). He's the trumpet player from Treme on HBO and Vaughn's is where we met the guy who plays Bunk on The Wire. So much more music I could go on about...but check the local paper and radios. Everyday they list who's playing where.
Um, I could go on forever so if you have any more questions don't hesitate to ask. NOLA is my favorite city in the world and I strongly believe in bringing the tourists back to help rebuild the city. Oh, and to answer your question, I would stay at least 3 nights. You can do a long weekend but you can also stay for a week and still not do everything.
