I made this for dinner last night and we loved it: Korean Style Chicken Noodle Bowl. I just ate the leftovers for lunch, which prompted this post.
I received an Ellie Krieger cookbook as a gift and I've found a couple of good recipes in it. My husband especially loves the Savory Peach Chicken.
The cookbook also includes a recipe for Honey Harvest Quinoa (for whatevever reason, I couldn't find it on the Food Network site, but here it is). I did steps 1-3 in the evening and then refridgerated it. And then for the next few mornings I would scoop some into a bowl, add the remaining ingredients, and microwave. It was a good breakfast for something different.

I make that same chicken pot pie! It's so good! However, mine always comes out rather soupy. Does yours? I also think it's kind of a PIA to make, so I don't do it often. My husband has asked for it several times recently though, so I should make it again soon.
Ooo, I'm interested in trying that Honey Harvest Quinoa. We've been eating a lot of quinoa lately, since I sort of stopped buying meat.
Last night we made this: Curried Quinoa Salad with Mango - it was really good but I would say don't add any salt and just salt to taste when it's done and we added chopped almonds and dried cranberries. Mangoes were on sale and I had never bought one before so that's what inspired us to make it.
I dig this recipe for sandwiches: Mock Tuna Salad
I love this recipe for Morning Glory Muffins. I sub out the apple butter and sup in a half cup of apple sauce with a touch of canola oil (maybe a T.?) I also usually go closer to 1 c. WW flour and 1 c. white flour. I omit or add walnuts depending on who I'm cooking for. I usually make them mini-muffins and cook for about 13 minutes instead of 15 to 20.
I make the same one! I love it. Leftovers are the best!
I had the opposite problem, mine seemed a bit dry. Strange!

I've had pesto on the brain lately - I think I will make that this weekend.
It's not too heavy on the pesto side but just enough. I thought I had a recipe online for a more strong pesto dish but must be a hard copy. The one thing I hate with pesto is it is perfect on the first meal but as a leftofer the oil separates from the rest of the sauce in the refrigerator and upon reheating and it seems to get excessively oily.

I don't know that Mike is really that crazy about pesto - so the first recipe should satisfy us both.
Do you think the Cajun dish freezes well? I have depleted my stash of homemade frozen meals and want to restock. If you have any other good freezable dishes, please share!
All I can say on the Cajun one is that it does great as a leftover after being in the refrigerator. So maybe it would freeze well?
