Chicken recipes to make in bulk?
We are having G's bday party this weekend and it's a whopping 42 people (Shoot me now!) - we only invited very close friends and family. I can already tell you we won't be having parties every year - this is crazy.
Anyway, DH wanted to cook ourselves, so I bought a ton of boneless chicken breasts a couple weeks ago on good sale so I want to make a chicken type dish as one of the food options - Originally DH wanted to do chicken parm, but every time I make it, it sucks.
Since it's going to be nice, I was thinking of maybe grilling some, but I want another option too. Any easy good ones to make in bulk? I'm thinking something like chicken marsala or something like that.

Why not grill it all and cut some up to put on top of a salad or mix in with pasta and sauce?
Chicken Waikiki is good too. I think we had that for Christmas, actually. The recipe can be doubled.

Spiedies are great on the grill and if you can find salamida's sauce in your grocery store, you don't even have to make the marinade!
i would never, ever undertake chicken parm for more than like six people. way too much work!
i'd also consider things like Slow Cooker Pulled Pork or Italian Drip Beef that you can just serve from the crock pot to make things as easy as possible. baked ziti and baked ravioli are also crowd pleasers.
How bout doing a "pulled" BBQ chicken in a crockpot.
Also, for the grilled chicken you could set up "Condiment Bar" type thing. Bascially grill up all the chicken and then have a bunch of condiments out and they can make thier own chicken. Thinking like BBQ, sweet and sour, buffalo, ranch dressing, Mexican (assorted cheeses, hot sauces, salsa, etc)
