Hi Again....
I was looking over our food budget and we spend way to much on food. So I am going to try meal planning to save some $$$.
Do any of you meal plan?
Maybe we could do a weekly menu check-in to help inspire each other. We could post it on Thursdays so people have the weekend to shop and make meals for the next week.
I always need inspiration! I'm vegetarian and gluten free BUT DH eats anything so I need ideas.
What do you guys think? Any tips? Great recipes?
Re: Meal Planning?
I always do a meal plan 2 weeks in advance but only buy ingredients for the first week. I modify the next week's plan if I have leftover ingerdients or I find a super recipe. If I don't follow the plan, I buy way too much at the store. I spend around $40-50 each week. Some weeks are less because we periodically have 'Use What You've Got' week where we mix up crazy stuff with items already in our pantry.
This was our menu for the week:
Monday: Baked Potato filled with broccoli and cheese with a salad
Tuesday: Red Beans and Rice and salad - I get the mix for $1.89. No meal is cheaper! Obviously you might not be able to eat it (don't know whether it's brown or white rice) But DH takes it in for lunch because there are plenty of leftovers.
Wednesday: Fried eggplant with spaghetti sauce and a salad. I use this recipe by Emeril. It'd be easy to sub gluten-free breadcrumbs instead!
Thursday: Spaghetti with grilled zucchini strips and spaghetti sauce and a salad
Friday: Chicken salad on toast and a side salad
Next week we will tentatively have:
Monday: Grilled vegetables, rice, and a salad - I'll use potatoes, zucchini, peppers, onion, eggplant, and green beans.
Tuesday: Walking Tacos - here's the link. I'll use black beans instead of meat
Wednesday: Potato Soup with salad
Thursday: Grilled tilapia with rice and a salad
Friday: Oven fried chicken fingers with green beans and a side salad
We either order out or go to my parents' house for dinners on weekends.

That sounds like a great idea. I normally do my meal planning on Sunday or Monday but I could put down my last week menu.
Meal planning is such a great way to save some money at the store. I also find it is so much less stressful when you know what your cooking.
As for tips I love food blogs and find so many yummy meals on them, we could share our favorites or links with our menu. I also get Racheal Ray mag ever month and she has tons of yummy ideas!
Thanks so much for all those ideas.... I planned out the next 2 weeks for DH meals on an app I just got on Iphone. It even generates my shopping list! WOO HOO!
So meals starting Sunday are:
Sunday: Taco Soup
Monday: 20 clove garlic chicken
Tuesday: Leftover chicken
Wednesday: GF baked Ziti
Thursday: Meat Loaf
Friday: Hot Dogs and Beans
Saturday: Leftovers
Sunday: Dinner out
Week of 4-18
Monday: Creamy cheese mashed potatoes and salad
Tuesday: Enchilladas
Wednesday: Burger Soup
Thursday: Leftovers
Friday: Pork and potatoes in Crockpot
Saturday- Leftovers
Sunday- dinner out
Super excited to have it all planned out! Also each meal shouldhave enough for hubby to take for lunch the following day!
Also most of the recipes I can make in the Crockpot! This will ensure they get made even when I'm at school or in the law library all day!

I'm a little late this week but I finally figured out my menu for the week.
tonight we had leek and broccoli soup dh also had a ham and cheese panni I had a few crackers.
