really soon! My mom can't do Easter this year like she normally would because she's going to be losing her job. Instead of skipping Easter, because it is my 2nd favorite holiday, I was thinking of hosting it at our house. What does everyone usually make, side dishes specifically?

Sorry to hear about your mom...my mom also lost her job 2 years ago.
We have Easter at our house ....we start off with cold antipasto and a few quiches. We make manicotti, ham and roast beef for the main dishes. Side dishes always vary. i want to make some new things this year, so im glad you posted this, maybe ill get some ideas!

This year we are making ham, au gratin potatoes, asparagus, deviled eggs and what we call goop (it's one of those jello salad thingies). There is only going to be six of us and two babies under a year so we are keeping things simple.
we are probably going to be small this year too, we are going to my moms and i offered to help cook. we normally do kielbasa and deviled eggs as apps then ham, scalloped potatoes and veggie for main and then dessert always varies.

We normaly have ham, `mashed potatoes or au gratin, carrots and a green veggie. I don't remember what we have for apps...although after my grandma died and my mom started doing it, my brother asked for no apps...too much food LOL

Whenever my family does a holiday the person hosting makes the main dishes and everyone else either brings an appetizer, side dish, or dessert. This put less stress (financially and other) on the host. The host will say "can you bring a dessert" "can you bring a vegetable dish" "can you bring a starch dish" It works really well for my family. Maybe that might work for you?
