So my parents are coming for easter and I can't figure out what to make! We're super casual so I don't need a big fancy meal, but I want to do more than just sandwiches.
2 years ago I hosted and did a big HUGE spread but it was not only easter, but it was the meet and greet for my parents and J's parents. I did a huge ham and everything and we were eating ham for weeks (well it felt like it). I went way above and beyond. There were only 6 of us and I had 2 tables full of food. Ridiculous!
Any of you hosting? What's your menu?? If not, tell me what you like the most on easter anyway!!!
So far, I'm having meatballs for an appetizer (my famous yummy, completely bad for you recipe) and cheesy potatoes (because they go good with anything).
Ideas?

I am! We're having 9-10 people and here's the menu:
Apps: cheese and onion quiche, proscuitto wrapped asparagus, deviled eggs, veggies and dip
Main & Sides: brown sugar and spicy mustard ham, garlic roasted mashed potatoes, onion corn and tomato salad, bacon green beans, potato or macaroni salad, honey yeast rolls
Desserts: fruit trifle with fresh whipped cream, cookie dough chocolate truffles, Easter sugar cookies decorated with royal icing
Drinks: soda, juice, tea and white wine sangria

I'm not hosting but my wonderful mother is cooking and like every year it will be a honey ham with mashed potatoes, green beans, corn, rolls and probably a couple other dishes. I might do a dessert this year but she'll probably do a blueberry crunch, cheesecake or chocolate cream pie or all of them.
P.S. Do you mind sharing that meatball recipe? I think those will go over much better Saturday then some boring sandwiches.
We decided we wanted to stay home this year and not host. Saturday we do Easter with my mom's whole family at Gamma's, and on Easter itself we want to get some stuff done around the house.
Our menu:
Apps: deviled eggs, tzatziki & pita
Main: lamb chops, twice baked potatoes, steamed asparagus in a lemony vinaigrette
Dessert: angel food cake with strawberries and cool whip.
Well, the bad part is that it's not an official recipe, but I'll give it a try. They end up kinda tasting like a swedish meatball. But we eat them as apps and then any leftovers we put on rice or noodles for dinner during the week.
I usually end up doubling this, but here is the recipe for the smaller amount
1 bag frozen meatballs (i usually get the homestyle ones)
1 can cream chicken soup
2 can cream mushroom soup
2 sticks of butter
Sour cream (it's up to your taste how much. I usually do a whole container, about 8 oz. A friend of mine adds more than that.)
Pepper/salt to taste
Garlic powder (if you like).
As far as cooking, there are a couple different options. It all ends up in the slow cooker though. If I have time, I'll do the steps below and put the meatballs in while frozen (3-4 hours). If I don't really have the time (1-2 hrs.) I'll bake the meatballs on a cookie sheet for about 15 mintues at whatever the instructions say.
Meanwhile, in crockpot, add the butter, sour cream, and the soups. I also add garlic powder at this point. Once everything is "creamy" and well melted and mixed, put the meatballs in there. Stir so the meatballs are covered well.
I typically cook on low. Stir often.
Like I said, sorry it's not a "written in stone" recipe. I had gotten it from one of my friends a couple years back and I've just modified it for our own tastes.
I should also note that as far as the butter and soup goes, you can vary that based upon your taste, if you want it more creamy, add less butter.....etc. I tend to add one can at a time and also add a cup of sour cream at a time. That way, I can add more if it needs it, but there isn't too much already.
