We are going to (hopefully) be in the position to take a nicer vacation this fall. Main requirements - beautiful scenery, relaxing atmosphere, outdoor activities. Does anyone have any recommendations. We did Mexico (Puerto Vallarta) for our last big vacation, so don't want to go back to the same location, but elsewhere in Mexico might be okay.

We have been to Sandals Whitehouse in Jamaica and I loved it there. The food was great, the pools were nice and it was a very beautiful resort. It is a little more pricey than Mexico and is an hour and a half bus ride but was so worth it.
Last June we visited Secrets Capri in Playa Del Carmen. We had a great time there as well and I would totally recommend it. The food was good and the had a really large main pool. It was a little smaller so not as spread out as Sandals and had 24 hour room service and the poolside service was great.
This May we will be visiting The Royal Playa Del Carmen. It looks amazing from the website and I have had friends visit there as well who really enjoyed it! I would recommend any of these places.
All of these places are all-inclusive and all are kid free which was/is nice for a relaxing vacation.
If the all-inclusives aren't a requirement for you - and you love beautiful beaches, friendly locals, and exploring the island in a Jeep - I wholeheartedly recommend the island of Vieques, Puerto Rico. Check it out on TripAdvisor.com.
We stayed at Evamer (shown in TripAdvisor's specialty lodging category), and it was AWESOME. We also checked out "Hector's by the Sea" while we were there, and we'll likely go back with a group of friends & stay there someday.
Vieques is definitely less developed and commercialized than most places we've been, so that's something to keep in mind. I've also been to Hawaii and loved it. Honestly, I'm pretty happy with sun & sand no matter the location!
