Hey Ladies - I'm looking for a good frosting recipe - I generally dont like frostings made with powdered sugar because they always seem to be SUPER sweet. I'm thinking about testing this one out tonight (

This one has powdered sugar, but it's still amazing.
Irish Cream Frosting:
1 stick unsalted butter
3 or 4 cups confectioners sugar
3 - 4 tablespoons of Bailey's Irish Cream.
Beat the butter in a mixing bowl for 5 - 7 minutes until light and fluffy. Add the confectioners sugar slowly until mix resembles frosting. Add the Bailey's until well covered.

I've only made glazes, but when in doubt I always start with Joy of Cooking. You could try one of their butter creams, starting on p. 1001. They call for an equivalent amount of sugar as the recipe you found. I usually end up cutting the sugar in most recipes. If you're doing a trial run you can start with 3/4 cup and see how that is.
Or do you like creme fraiche? I like that way more than butter cream, and it's naturally less sweet.
This is a very similar recipe to the one Baystate wrote, and it's delicious! I think it has a little less confectioner sugar for the butter amount than hers (hers has 3-4 cups of sugar for 1 stick butter - this works out to 2.5 cups sugar for one stick butter), so it may be a little less sweet. I'm sure if you don't want the Bailey's you can use regular milk.
For the Baileys Frosting:
2 cups unsalted butter, at room temperature
5 cups powdered sugar
6 tablespoons Baileys Irish Cream
To Make the Baileys Frosting: Using the whisk attachment of a stand mixer, whip the butter on medium-high speed for 5 minutes, scraping the sides of the bowl occasionally. Reduce the speed to medium-low and gradually add the powdered sugar until all of it is incorporated. Add the Baileys, increase the speed to medium-high and whip for another 2 to 3 minutes, until it is light and fluffy.

Update - I tried the frosting in my OP last night and its amazing, it will for sure be my "go to" frosting from now on. I am however going to try to lighten it up a bit in a test batch today by subbing fat free half and half for the whole milk, and using light butter instead of full fat butter. I'll let you know how it turns out
