How do YOU make scallops?

I tried making them last night... Did NOT turn out how I wanted.

I REALLY want to have the Ohana's sauce for them, but that isn't happening! HA

  • My go-to recipe isn't terribly involved...

    3/4 cup butter
    3 tablespoons minced garlic
    2 pounds large sea scallops
    1 teaspoon salt
    2 tablespoons fresh lemon juice

     

    Melt butter in a large skillet over medium-high heat. Stir in garlic, and cook for a few seconds until it smells good. Add scallops, and cook for a few minutes on one side, then turn over, and continue cooking until firm and opaque.

    Remove the scallops, add lemon juice and salt to the butter and then pour over the scallops.

  • I think the thing about scallops is that they are so easy to overcook.  I just make them with some EVOO in a pan on med/med high, put in there for 1-2 mins on first side and about a min on second.  If they are cooked longer, they get so rubbery.  I only salt and pepper one side, because they are so delicate.  I serve with warm drawn butter and lemon.  Yum!!!
