Easter Menu

We're hosting two of our families for Easter Dinner (not lunch)

  • We always do ham.  I see that they're on HyVee's 3 day sale, so we'll get a spiral sliced ham to bake.  YUMMY!  Then some sort of green bean concoction usually; either fresh with a bit of seasoning, green bean casserole, or mustard green beans.  Sometimes a carrot thing (they are the bunny's favorite!).  Then mashed pototoes with white gravy-this is tradition with DH's family, but I'm thinking it could also be fun to do roasted baby red potatoes with olive oil/butter and salt and herbs.  Deviled eggs the way my MIL makes them. [she hard boils, then halves them, scoop out the yellow part together.  THEN dye the white halves.  They get so very bright then, are so very festive!]  Sometimes DH insists on stuffing as well. 

    Dessert is just whatever we feel like, but one of my favorite is carrot cake cookies.  Sometimes a nice angel food cake with fresh strawberries and a light glaze.  Or Strawberry Pineapple Sorbet if it'll be warm.  Maybe Topeka Slush

     Appetizers...  We've never done them for Easter.  I've got nothing spring-ish coming to mind.  I'm stuck on the cookies and sorbet right now!

  • We ALWAYS have pickel roll ups for an appetizer. A relish tray.

    We do a ham also, mashed potatoes, some sort of casserole, my grandma makes my favorite jello thing, which is rasberry jello, w/ rasberries in it! YUMMY!

    YES! LOL My other grandma ALWAYS makes my favorite!!! I'm such a geek, I LOVE Cherry Jello w/ Cherry Pie filling OOHHHHHH Homer Simpson drool noise please...

     

  • For dessert, I am practicing a healthy raspberry bavarian cake this weekend, if you want (and if it turns out ok) I can share the recipe. For me, monkey bread is an Easter staple...we almost always did brunch though. Knowing my parents, we will probably grill out, and I am cool with that!
  • Egg shaped jello jigglers, the ones that look like real eggs, not flat.  :)  we even have the molds at our house in case you want to borrow them!  Let me know and I'll bring them over tomorrow.  I have two, but only need one for us.

  • I'm playing in the sunrise service (6:21 am!) and then we are going out for breakfast (surprisingly, most buffets open at 7!) and then we are headed home to take a nap! :o)

    I am debating making a ham meal later on in the day. It is just the 3 of us so we'll see.  Maybe we'll just eat easter candy all day...ha!

    Since both of my grandmothers are gone, we haven't had a jello thing at a family meal. My mom is making dinner, probably ham & scalloped potatoes, but I think now I'm going to have to make a jello thing.

  • We always get a ham from Lambert & Ewers in Valley Junction - their spiral cut Honey Glazed Hams are amazing. Two appetizers that come to mind (semi-spring) would be Warm Olive Bruschetta and Greek Layered Pita Dip. They're both very good. If you're looking for a "twist" to serving traditional jello- I'd highly recommend making Strawberry Jello and Pretzel Salad - it's different and very good. All of these recipes should be in my blog! I'm not cooking this year (sad!) so I'm happy to help with Menus :)
