I was talking with my Belfast friend and she is thinking of opening ANOTHER place in Belfast...a Mexican place. I asked her if they were going to have real margaritas and we got into a conversation about it.
What do you consider a margarita?
I think a real margarita is lime juice, tequila and a bit of cointreau. She said that Mainers, for whatever reason, like margaritas made with sour mix.

I would concur that I make my margaritas with fresh lime juice- they taste so much better! Too much sour mix tends to make my stomach hurt. When I make 'em at home and I don't feel like squeezing a ton of limes, I'll use Simply Limeaid in a pinch.

Actually, I am wondering if it's like the Americanization of Chinese food-- you know, come to America and realize that the American palate isn't up for the traditional authentic tastes and textures, so you change it to make it more marketable. I know that's how Chicken Tikka Massala got "invented..."
In my house (and my mother's), you take a fresh lime and squeeze at least half into a shaker filled with ice, then you put in around 2 shots of tequila, 1-1.5 shots of Triple Sec. You take the lime rind and wet the rim of the glass and load up the lime juice rim with kosher salt. You shake up the margarita, pour it in, and then add in a few ice cubes- I usually steal them from the shaker cup.
There is no soda, mix, juice, or other filthy additions. That's blasphemy!

This is EXACTLY what I do. I then pour it over a couple ice cubes.

Mmmmm....I love good tequila. It's almost as complex as scotch, and wicked tasty. Never shoot it, always sip. Fantastic. One of the best nights MH and I have ever had involved sampling tequilas and conversing in broken Spanglish with a bartender in Todos Santos, Baja, Mexico. Solidified my love of tequila forever.
Agreed! DH and I made friends with a few bartenders on our Mexican honeymoon and they would make "real" margaritas for us. The average guest who walked up and ordered one would get the sour mix version, they had a pre-made mix that they kept in a bottle and just added a couple of shots of tequila to and poured over ice or blended into a frozen version. One day I commented that I was surprised that Margaritas in Mexico didn't taste much different from the ones I got at bars in Maine. I got a whole lesson in making a "real" margarita. It was awesome.
I don't think it's so much the tequilla for me, it's more the lime, sour stuff or whatever.

I was a bartender at three different bars and we always used sour mix. The only time I made it with lime juice is when someone asked for a 3-2-1. And that was always made with Patron and Cointreau. It's delicious!
Definitely in the "no sour mix" category over here. I have a great, simple recipe that uses just fresh lime juice, agave nectar and Patron...mmmm...and always with a salted rim...
Reminds me of Memorial Day BBQing with my family...my uncle makes the most insanely strong, fresh margaritas.
