Hello ladies! As you know I've been taking cake decorating classes (until now because my third and final course was cancelled because there were not enough participants. Boo)
And my cousin is having Easter at her house and asked if I'd make cake. My aunt usually does so it's nutso they asked me to do it.
There will be mostly adults there and only (I assume based on the usual attendees) two children, one who is severely allergic to peanuts.
Should I just play it safe and make a cake with a layer of chocolate and a layer of vanilla?

You have to be careful with chocolate, because some chocolate products including cake mixes and icings (if you're not doing them from scratch) can be produced in a plant that handles nuts...so if you're using box mix and/or canned icing, read the lable first and double check....if it doesn't say anything about being produced near nuts, then I'd say you're safe!
Since it's easter, you could always also do vanilla cake with fresh, colorful fruit filling...nice, bright and spring-y
though chocolate and vanilla is always a classic hit!
what about an angel food cake? and like pp said above perhaps you can do 2 layers with a layer of strawberries in between and frost the top with whipped cream or drizzle a nut free chocolate around the cake.
