Tasty Tuesday

Figured I would get this going for today.

It's rainy and cold here, so I'm thinking about throwing some soup in the crockpot. This is my current fav. soup...DH and I had been looking for a good chicken tortilla soup for a long while, (there is a deli in town that has the most amazing chicken tortilla and we want it at home!) and this one is great. Not quite the same as the deli, but pretty delicious!

1 cup chunky medium salsa8 oz. boneless skinless chicken breasts 1 (15 oz) can yellow corn, undrained1 (15 oz) can diced tomatoes with green chilies, undrained2 (15 oz) cans of cream of chicken soup2 tablespoons taco seasoning2 (6 inch) corn tortillas cut into strips1 cup shredded cheddar cheese

Throw everything into the crockpot on low for 8 hours. Shortly before serving, pull the chicken out and shred. I put the cheese and chips on top.

  • It's really gross weather here today, too.  I'm tired of it.  BUT this Chicken Tortilla soup sounds amazing!  This would be a great week for me to utilize the crock pot :) Thanks!

    I'm at work and can't think of any tasty recipes at the moment... maybe later?

  • I just made oatmeal applesauce pancakes for lunch for my son. They are incredible.

    1 cup all-purpose flour1/3 cup quick cooking oats1 teaspoon baking powder1/4 teaspoon baking soda1/2 teaspoon cinnamon3/4 cup unsweetened applesauce1/2 cup fat free sour cream1 egg, lightly beaten1 teaspoon vanilla extract1/3 cup milk
    Heat a lightly oiled griddle over medium-low heat.In a bowl, mix the flour, oats, baking powder, baking soda, and cinnamon. In a separate bowl, mix applesauce, sour cream, egg, and vanilla. Stir applesauce mixture and milk into the flour mixture until evenly moist and thick.Scoop about 1/4 cup batter for each pancake onto the prepared griddle, and cook, turning once, until golden brown on both sides.

  • I'm craving sweets today so I'm busting out a chocolate whipped cream pie. Super easy and super YUMMY!...

    1 Keebler graham cracker pie crust (I find that the Keebler crust holds up better and tastes better than any other brand)

    1 packet of Jello Cook & Serve chocolate pudding (DO NOT use instant! It wont set or taste the same)

    1 container Low Fat Cool Whip

    Chocolate sprinkles or shavings to top

    Open the pie crust and set in the fridge. Cook the pudding, following the directions on the box. When pudding is fully cooked, pull the pie crust out of the fridge and fill. Put the pie back in the fridge until pudding is set and cooled, then top generously with whipped cream. Add sprinkles or chocolate shavings to taste for decoration. Enjoy!

  • I made homemade sloppy joe's tonight.

    1lb ground beef

    1 cup Ketchup

    2 Tablespoons Yellow Mustard

    2 Tablespoons Vinegar

    1 Tablespoon Worchestier Sauce

     Cook beef and drain off the fat, put the meat back into the pan and add the other ingredients. We put ours on regular hamburger rolls, and DH likes regular Potato chips with his.

  • Tonight I made some chicken curry.  It consisted of browning some chicken, then dumping in the sauce (yellow curry with coconut milk) that I bought from the store.  Then I microwaved a packet of rice and voila!  Dinner! 

    Also drinking some yummy cheap organic wine I picked up on sale.  It was a bad day, so curry and wine are my comfort foods.
