Easter

What are your plans for this upcoming Easter? If you're cooking, what's on the menu?

I am hosting this year and trying to figure out a good menu. I always wind up with 9 million sides.

  • No cooking for me!  We're doing brunch at my aunt's and dinner with the ILs.  There will be Easter egg hunts at both places.  DH has to work until 5 so he'll miss the brunch but meet us for dinner at his parents'. 

    Good luck with the cooking- what's on the menu so far?

  • I'm not hosting as we're going to my mom's but she usually has: Ham (pineapples and cherries to go on top), broccoli casserole, string beans, corn, mashed potatoes, hot apples and yams (I think this is part of the Easter menu), and rolls. I know I'm missing something but it's pretty easy stuff.

    Definitely having ham. I got a free one from Shop Rite! Although I always upgrade to the Spiral one. They are just better.

  • We're going to my sister's and I'm assuming my IL's at some point but DH never calls his family so all that is still up in the air.  I know we're having ham and I think my sister is also making stuffed shells because my BIL hates ham.  I'm bringing pierogies, potato salad and carrot cake.

  • i have 12 for a big dinner saturday night and then 7 for brunch the following day.  the dinner menu is in a post about 1/2 way down the page.  lots of apps, sides and desserts.  we usually do a pork roast for dinner because i am not a huge fan of ham : 

    brunch is easy- honey baked ham, hb sweet potato cassarole, some sort of scrambled egg bake, pastries, fruit, coffee, juice and mimosas.  minimal cooking for me.  popping stuff in the oven after church i can handle.

  • We are going to my moms - we are having ham, gnocchi, macaroni salad, potato salad, kielbasa and sauerkraut. Now my mouth is watering...

    On the menu so far is ham (pineapples on top), pineapple stuffing (sooo good!), homemade mashed potatoes, biscuits.

    I think SIL is making baked macaroni and cheese and MIL is making something involving veggies. Green beans? corn? no idea.

    I'm stuck on a dessert idea.

  • My mom is cooking.  She was just diagnosed with Celiac Disease last week, so the menu has changed drastically.  I was supposed to be making baked mac/cheese to go with the ham, pineapple stuffing, etc.  Now I am making a roasted potato dish with evoo, balsamic and dijon mustard since all are gluten-free.

  • MIL's for lunch and my parents' for dinner.  We will most likely have ham at both.  While I'm not a fan of MIL's cooking, she makes some amazing deviled eggs and I am so very much looking forward to them.  I told my mom that baby wants ham with ham sauce (weird family recipe), sweet potatoes and baked beans.  If someone makes baked mac and cheese on Sunday I just might die.  Actually, I might offer to bring it to my mom's, ha.

  • I'm going to the IL's this weekend and they typically have ham, sweet potatoes, corn casserole, and macaroni and cheese.  Sounds good to me :)

I ordered a veal roast and plan to pick up an hb ham, MIL is making potato salad, still need to figure out other sides and dessert. I want to try to make some homemade strawberry ice cream, no clue what else

    I think her recipes calls for cornstarch, but this is the recipe I use when I want to make it. They call it "Baked Corn" in their part of PA, but you can also search Corn Pudding.

    She also makes this one which I made for xmas - it's also very good but it comes out more like Jiffy cornbread. http://allrecipes.com/Recipe/Baked-Corn-I/Detail.aspx

    My aunt makes the pineapple stuffing that Tam is making and it's awesome!

    yes sort of, prejordan tonight. i hate his outfit but found nothing great so instead a sweater is going over p's outfit it. baby had the most skeptical look on his face when i tried it on him. can't post it now (iphone) but i got a pic

  • too funny lachute!  i love the fact that the baby was giving you the side eye for not loving his christening outfit.  that is awesome. 

    i have my christening gown for a girl and my dad's christening blanket.  dh's parents are looking to see if they can find any of his stuff.  we shall see.

    yeah my mom has my gown which is really timeless and cute, and we have my blanket which will accompany him. p's is very 1970s well the romper part, polyester and all and not as classic. 

  • My mom is making Raviolis.  My sister is going to be in California, so it will just be my parents, DH and bro.
