I'm making meatloaf for dinner tonight and I love the recipe except for the mashed potatoes. It's a WW recipe and while the meatloaf was delicious, the potatoes were disappointing. I want to do something a little different.
I was thinking of quartering red potatoes and baking them with some garlic and shredded parmesan but I'm not really sure how to pull it off. Would you boil then and then bake? Just bake? Soak in salt/sugar water first (something I've seen suggested to help make potatoes that you bake in the oven crispy)? Should I toss them in the garlic/cheese, and some olive oil first?
Does any of this sound like it would work and/or be appetizing? I'm terrible at this kind of thing. Oh, and I'm trying to keep them relatively healthy. Any input is welcome.

I agree, toss raw potatoes quartered with EVOO, salt, pepper, herbs but NOT the cheese. Then roast at 425* and flip every 10 minutes or so until they reach your desired crispiness, then sprinkle with cheese.
If you do the cheese and then roast, it will melt and burn.
