Re: Weekly menus?
Last night we had orecchiette pasta with chicken sausage, southern greens, peas, artichoke hearts and pine nuts with steamed artichokes on the side (this meal was made up of entirely TJ's stuff)
Tonight was salsa chicken in the crockpot over brown rice with tortillas - we'll have the rest of the salsa chicken later this week or early next week in enchilada form.
Tomorrow is chicken noodle and greens soup (also in the crockpot) since we have a rotisserie chicken that we need to finish off
At some point we'll have pizzas with heirloom tomatoes and more chicken sausage and southern greens, but probably not until next week.
Friday Kyva and I are having dinner at a friend's house and DH is fending for himself, and then we'll be visiting the ILs for Easter weekend.
Last night was pulled pork sandwiches w/fries (crockpot recipe - get pork roast, 1 can of coke or diet coke/pepsi works too, 1 bottle of bbq sauce, put on low in slow cooker and cook for 8 hours....divine)
tonight - not sure since we're having dinner at IL house.
Tomorrow - Chicken & spaghetti
Fri through the weekend - flying by the seat of my pants but I will make Cheesy Chili Mac (WW recipe) at some point.
I need to get better at writing down menus for the week to plan better.
IUI #1 10/12/11 (Bravelle + HCG + Prometrium & acupuncture) = 10/26 BFP! Beta #1=250, Beta #2= 615. 1st u/s 11/8.
Seders the last two nights.
Tonight is baked potato and salad bar at home.
Thursday is fend for yourself night...I'll have fish or chicken and a salad.
Friday is dinner at the ILs probably and then this weekend at my folks.
Basically, I'm not cooking much this week, but if you are looking for inspiration....soup sounds really good with the drizzles today.
