DH and I will be in Dallas for a long weekend (Hyatt at Reunion Tower) but will have a car so don't mind driving to good eats.
DH lived in TX most his life and I lived there 10 years (Arlington) but that was quite a while back and frankly we've forgotten (if we ever knew) the 'must tries' of DFW.
I'm a big fan of the red meat but DH is a chicken only kinda guy. We're also not seafood people or big drinkers. Mostly I'd love recs for good southwest, tex-mex type food but would also love recs. for a great steakhouse or a place to get TX BBQ. Basically great stuff we can't get here in DC.
We're fine with the cheap hole-in-the-wall type places but are also ok with spending $50+ pp (drinks excluded) if it's worth it.

Go to Spring Creek BBQ. Their rolls alone make it worth it.
We love Campisi's on Mockingbird (Italian), Enchilada's on Greenville, Tupinamba's on Inwood, Blue Mesa (several locations and they have an awesome brunch buffet on Sunday's), III (3) Forks (steak), Nick and Sam's (steak), Reata in Fort Worth. BTW, all the others I have mentioned are in Dallas. The Reata is in the only one in FW. With the exception of The Reata, most are within thirty minutes of your hotel. If you're looking for a fun burger place, try The Twisted Root. There's one in Deep Ellum and another one near SMU now (I think it's the SMU Blvd exit on Central). Have fun!!!!!

Campisis and Enchiladas. mmmm. My mouth is watering as we speak. I haven't ever been to Nick & Sam's, but I've heard it's good.
Babe's is good, and I think that's a good "Texas place". But, it's also better to go with a group of people, rather than just as a couple.
for Tex-Mex, Matito's, on Routh St, is near downtown and a lot of fun. if you go there, ask for "The Bob". it's not on the menu, but it's a great queso dip with, like, everything in the kitchen thrown in.

for BBQ, you should find a sonny bryan's. the original, on inwood, is a tiny little shack and they shut down when they're out of food, so it's worth it to get there a little early.

my favorite place in dallas isn't what you're asking for, but it's awesome. Patrizio's in Highland Park Village is a really great Italian restaurant. the shopping center is VERY chi-chi. it's right next door to Hermes & Jimmy Choo, but the prices are totally reasonable. you CAN spend a lot, especially if you get drinks, but you can also have a wonderful meal with appetizers for the same price as going to Chili's.

For BBQ, I loooove Back Country Bar-B-Que at Park Lane & Greenville. The owner is a sweet old guy who always recognizes me and my husband when we come in. They have this twice-baked potato casserole that looks kinda weird, but is soooo good. I'm talking, eat-it-all-after-you're-stuffed-until-you're-miserable good.
For Mexican food, I like Mariano's La Hacienda on Skillman. The owner invented the frozen margarita
If you are staying downtown, I totally second Mattito's for Tex-Mex! Love that place. Another Tex-Mex Option that is close is Primo's (in Uptown on McKinney) or Taco Diner (West Village).
DH and I LOVE the restaurants off of Henderson. It is about 2 exits north of downtown on 75 (Knox-Henderson exit). If you head east you are on Henderson. You'll find:
Hector's on Henderson - little pricey but great american food with a modern twist. Hector will come around and you can talk to him some. He has a grand piano with someone playing some great tunes during dinner, and if your lucky, Hector will even sing for you! They have this great steak with a fried egg on top and a piece of sourdough on bottom to soak up all the yolk and steak juices. DH always orders it, and I get a bite. Yummy.
Hibiscus - another great contemporary american restaurant. They have excellent steak and chicken options.
Fireside pies - if it is a nice day, their patio can't be beat! They have great salads and delicious pizza. This is no normal pizza. They have their own woodfire grill, and all ingredients are local. They change thier pies based on what is in season. DELICIOUS!
The Porch - A little less formal than Hibiscus & Hectors, but still delicious american cuisine. Try their mac & cheese, it is heavenly. I know you aren't into drinking much, but they have some very creative mixed drinks that are delicious.

Our favorite BBQ is called Main Street BBQ. Its in the HEB area, but is very good and has been featured on the food network.
We also like Good 2 Go Tacos in Dallas.
Main St. BBQ is in Euless and is only opened Friday, Saturday and Sunday until 4 PM. It's good, all you can eat but they are only opened for a limited amount of time.
And I just remembered one of our favorites: Sambuca. It's in the Uptown area as well. They have live music nearly every night and really good food.
I loved Cuba Libre (and their pineapple/serrano mojito's, mmm) but they are closed for good. so sad, they were always packed. I don't know what happened.

It re-opened as a new concept. Alma, I think.
It's not tex-mex, more true mexican, but Javier's is one of our favorite places. It's in uptown.
Pappa's Bros steakhouse was just ranked as #1 in DFW by D Magazine. I'm sure they have chicken options for your DH.
Our favorite restaurant in Dallas is Hibiscus, as someone mentioned before.
