Any recipe recs for chicken/rice or chicken/potato recipes in dutch oven?

I have chicken breasts (boneless/skinless)

I have rice.

I have potatoes.

I have other random stuff.

I have my DH's new favorite "toy" - a 7 quart le Creuset dutch oven, which he's been making a ton of wonderful recipes in lately.

It's my turn to cook tonight.

I'm working from home, so it can be something that takes a while.

Suggestions?

Wife, Musician, Fed, WW-er, and Mom of three little kids - not necessarily in that order.

    It could require more garlic than you have on hand, but this + crusty bread is totally worth a trip to the store.  Just add a bit of olive oil or 1/2 c. white wine to keep the moisture you'd normally get from the skin in the breasts.

  • We're having this tomorrow night. It's very tweak-able if you don't have all the ingredients. This is for the crockpot but I'd bet you could do it in the dutch oven. My kids love this soup.

  • I call this my death chicken recipe, because I could eat it to death :)

    chicken breasts, cut up into bite sized pieces
    1 T butter
    1 package good seasons italian dressing mix
    1 package mushrooms (baby portabellos work best)
    8 oz cream cheese
    1 can cream of mushroom soup
    1/4 cup white wine (I sometimes add a little bit more)
    1 cup frozen peas (or as much as you want to add, I just eyeball it)

    Brown chicken in skillet with butter and italian dressing; add mushrooms to skillet and cook until tender. Mix cream cheese, cream of mushroom soup, and white wine together in a mixing bowl using an electric mixer until smooth. Add cream cheese mixture and peas to chicken and mushrooms in a baking dish, and bake at 375 degrees for about 20 minutes, or until the sauce is bubbling and smooth. Add salt and pepper to taste if need be, and serve over rice.
