Easter dinner plans?

If you celebrate easter, that is.....

What are you planning to make? Or what does your family usually server?

This will be my first Easter cooking! Just me, zig, my mom and my little sister will be here, we're keeping it small since this will be the first holiday w/o my dad :(

SO FAR, here's my plan:

- Mixed greens salad w/ pear slices, pecans, strawberries and goat cheese crumbles (and balsamic viniagrette)

- Asparagus cooked w/ almonds, red pepper and lemon juice

- Sweet-Hot Plum-glazed ham (found recipe online and sounds DELICIOUS)

I'll also need some sort of potato, just not sure what yet, and a biscuit/roll thing. I'm still undecided. Also maybe a lemon-coconut cake for desert.

OH i bet those boots are adorable!

asparagus is really easy to make, you just have to keep a watchful eye on it and test it w/ a fork every few minutes after about the 5 minute mark (if youre doing it on top of the stove). it goes from that perfectly cooked but still crunchy point to the ew-its-squishy point very quickly :P

  • Last Easter was just me and J, this easter he is getting confirmed so my parents & siblings are coming down to visit so we will have 7 of us here for dinner!

Last year when it was just DH and I, we had lamb chops, potatoes, green beans and that was probably it, knowing us. This year we're making

    - ham (lamb for me, I HATE ham)
    - potatoes
    - greenbeans
    - a vegetable to be named later
    - rolls

  • DH and I are lucky that our parents live within an hour of each other an can swing both families on holidays.

We are going to my mom and dad's Saturday, and doing dinner with them Sat. night. My bro and SIL are going to her parents, so we aren't doing anything to extravagant. We were with my family for most of Thanksgiving and Christmas, so we are spending Easter with DH's fam on Sunday.

Usually my mom does ham, potatoes, rolls, etc. His fam may do ham and lasagna, but his mom mentioned maybe going out to eat.

  • For breakfast it'll be me. DH and the 3 kids, so I'm making an egg casserole and French Toast casserole that I can make the day before.

Easter Dinner at my parents house (2pm) will be ham, fresh sausage, cheesy potatoes, shrimp salad, fruit and rye bread. Dessert will be slush cake.

Dinner at in-laws (5 or 6pm) I have NO clue. Maybe ham and potatoes, and some veggies. not really sure. they usually aren't around for Easter, I think this is our first Easter with them actually.

  • We have three different invites for dinner plus a strong request for us to both make it to church.  It's nice to be wanted, but frustrating that it's only on their terms.  We've been telling everyone we're going away for the weekend.  We're not, but it's tempting!  I'm sure we'll do some combination of families.

  • My family usually has dinner at my parents,  with ham & au gratin potatoes and all sorts of other things.   I honestly don't know what my mom is doing this year (I am a bad daughter this week... but I had six DIFFERENT lectures to give this week).   Once I moved, I didn't always go home for Easter since I usually didn't get more than Good Friday off (and i don't even get that now).

I thought we were just going to have brunch for some friends/coworkers this year,  but my inlaws are visiting us now, and we are all going to go to my brother in law's  house for the weekend.    I really have no idea what we will have!

I'm about to e-mail to see what we can bring, etc.

  • DH and I are having the majority of our family that lives close over (about 25) people.  We are doing a potluck style brunch so everyone is contributing.  So far the list is

    Quiche (3 different veggie kinds)

    Ham

    Turkey

    Fruit Salad

    French Toast dish

    Tomato, Mozzarella, Bail salad

    Bacon, Saussage

    Salad

I'm excited, it will be our first time having everyone over our new house!

  • We just decided last night.  My sister in law has a turkey to use, so we are kind of having a Thanksgiving meal.  I am making traditional stuffing and cranberry/apple stuffing.  I am also making white chocolate cranberry oatmeal cookies and some other kind of dessert.
