Icebox Coconut Cake recipe?
Hey Ladies!
Has anyone ever made an "icebox" or "refridgerator" coconut cake? The concept is a plain white cake, slathered in a very moist coconuty frosting, then wrapped in saran in the fridge for 4-5 days, so all the flavors soak in. All the recipes I'm finding online call for box cake mix (I was looking more for scratch recipes), and then the variations on frostings are all over the place-- some call for cool whip as the base (blah!), others for sour cream, other still for condensed milk, etc.
Just wondering if anyone has made one with a particular recipe they could recommend? If not, I'll wing it :-)

I was actually thinking of making this one for Easter..it uses cake mix and has cool whip though.
