Since I have graduated, both my undergrad and grad schools have changed from colleges to universities. On my resume, should I list its name when I graduated? They are in the same state and are pretty recent changes (as in the past two years). I have seen some suggestions online to put _____ State College (currently known as ________ State University), but that seems a little much.

If the change is minor (like Montana College to Montana University) I'd just put the most commonly known name and then you can explain if anyone asks or requests a transcript or

Use the current name of the school. That way, if they need to call to verify your degree, they have most recent contact info. I assume you are listing the date (at least the year) you graduated as well- that will provide enough information to locate your file and verify your degree(s).
If you are ever asked to provide a copy of your diplomas (not that it will happen, but it could- and some people display them in their offices), then it's easy to explain that you graduated in [year x] and they changed their name in [year y]

This. If they run a background check on you and everything is not exactly correct it will show up as a red flag and possibly delay the process
I think it depends on the type of job you are applying for. If it is a job that is dependent on your academic credentials (i.e. a teaching position), I would do the Montana University (formerly Montana College).
If it's a job that just requires you have a degree, just list the name the school is currently known as and explain later if necessary.

My mother's undergrad college was absorbed by another school. She has this same issue.
