Freezing Lasagna

I am getting a very late start on my freezer meals.  I hope to knock out a few meals tonight and this weekend...something is better than nothing.  Anyway, I'd like to have lasagna as one of our meals, but wondering how do the noodles hold up? Most recipes state to make the lasagna as normal up to the step of actually putting it into the oven, which means boiling the noodles.  Do the noodles taste mushy once it's finally cooked?  Just wondering...

  • I don't pre-cook my noodles.  I actually use them uncooked in my lasagna and they cook & soften in the oven.  I personally cook the meat and make the sauce, and then assemble, but I don't bake it before freezing.  My mom, on the other hand, fully cooks hers and then freezes.  The noodles are fine.

    Thanks, I've seen where it states to not cook the noodles even when you are not freezing it, but I've never been brave enough to try it.  Maybe I will make two...one I'll cook the noodles, and one I will try without cooking then freeze both.

  • I've done it both ways and never had an issue. But if you're nervous about it, just partially cook the noodles.

  • I always just cooked the noodles for half the time recommend. I do that whether I am freezing the lasagna or baking it. The noodles are always perfect.

  • Like others said, I also cook the noodles just partway.  They always cook more in the oven and I don't like overly mushy noodles.

  • I buy the Barilla noodles that you don't have to cook, love them!  When I know I'm going to freeze it, I put a little more sauce on than usual, maybe a cup or two more.

    I cook it fully, then put foil and press 'n seal over it in a couple of layers.

    Soups are also good freezer meals and great for after baby, you can put it in a mug while feeding baby.

  • I fully cook my lasagna before freezing it.  But that's usually because I make it to eat for dinner and freeze the leftovers. 

    I might be in the minority here, but I didn't use any of my freezer meals that I made before LO came.  My family and friends stocked our fridge and we ate off of that for two weeks, and then I was able to start cooking after that.  I didn't need the freezer meals until i started back at work.  Now the freezer meals and crockpot make up 3 weeknights of dinners.
