what to serve with honey-baked ham?
My ILs are coming to town for Easter (whee) and have decreed they will bring a honey-baked ham for Easter dinner.
Which is great, I guess, but I have no idea what to serve with it. Something springy? Not too heavy? My mom and brother are also coming and offered to make sides so I'm trying to figure out what we can farm out.
Any good ideas? (And don't think I haven't already googled "what to serve with honey-baked ham" because I totally have.)

I love the asparagus idea. I think I'm going to make one like the recipe soprano suggested (but with peas and basil too).
Not sure how ambitious I'm feeling about the potatoes but maybe I'll try scalloped from scratch!I

Roasted potatoes could NOT be easier. Wash red potatoes. Cut them into quarters. Toss with canola oil. Srpinkle rosemary on top (can use fresh or dried). Bake at 400 until nicely browned and crisped. Call me in for dinner. I will eat them all up. they look fancy like you've spent hours preparing. You can do everything but cook them before everyone comes, even.
(I also sprinkle kosher salt on mine bc I have a salt addiction. Not everyone likes that.... bc they are stupid and don't know the love of salt like I do.)
(I'm clearly not a fan of scalloped or au gratin potatoes...
....which is why I am a pusher for the roaster recipe.)

It took me years to learn that scalloped potatoes =/= potatoes covered in Velveeta (ala my mom, although they were still damn good). I love this potato gratin recipe. Super easy.

Here is what I love having with ham:
Pineapple Stuffing - a little sweet but so good with the hamBaked Green Beans - my fave way to make green beans ever
Chive Biscuits - not to much work for a homemade biscuit but if you make the fancy butters below you can just get a premade biscuit
Compound Herb Butter and Honey Butter - both are so good I can't pick a fave
