Easter Side dish

I need to bring a side dish to Easter dinner...

the potatoes post reminded me of this...but someone is already bringing those.  

I know a broc. salad is coming and a reg. salad.  cole slaw as well.

  • What about making a quiche as a side?  Or you could do a butternut squash casserole or some roasted veggies (asparagus, or a spring mix).

  • great idea Pam!  I think I will do the roasted veggies..we all love asparagus :)
  • Okay this may sound weird but it is fantastic, easy to make, no heating required, and pretty inexpensive to make .... a bean and corn salad.

    The below recipe is something like what I make but I usally add different color peppers and different beans (black beans, kidney, and chick peas):

     Or ... one of my favorite sides at my H's families easter is creamed corn.

    Or just bring a dessert ... I'm planning on bringing "Dirt" to our Easter brunch
