Since you were asking about cooking zucchini a few weeks ago...
I just saw this recipe, which is a different version of something I used to make all the time. Except because I don't like ham (or any pork for that matter), the recipe I was given is way better...in my opinion ![]()
It's the same concept (making boats out of zucchini), except I put browned ground beef, marinara sauce, mozzerella cheese, parmesan cheese, and breadcrumbs in them. They're so good, and so easy!
My coworker puts some kind of cacciatore sauce in a bottle that she found at the grocery store on them instead of the marinara and said it's awesome.

Thanks! My coworker just raved about them when she made them, so I had to try them. And now that I think of it, it was actually the Jennie-O Italian ground turkey that I used, not ground beef. That's where she got the recipe - on the back of the package.
Anyway, I'm glad you're enjoying the zucchini! It's such a great vegetable (second only to broccoli for me). I hope my dad is growing some in his garden this year...nothing like fresh veggies right out of the ground!
