question about gluten free

I know that gluten is in wheat, rye, barley, and maybe some other grain I am forgetting.

There is a pizza place in town who is claiming to have 'gluten free wheat dough'

I feel that it must be a lie. Either it is wheat dough or it is GF, but it can't be both.

DH thinks it is possible, like they stripped the gluten from the wheat somehow. 

I want to ask at the restaurant, but the owners are the only two who work there and they are soooo sensitive/touchy and approaching Seinfeld Soup Nazi that I don't dare ask which part they are lying about.

So can such a thing exist; GF wheat dough?

  • maybe they should be advertising gluten-free "wheat" dough... as far as I know you can't take the gluten out of wheat.

  • I'm not too familiar with gluten free foods, but there are a ton of recipes online for gluten free wheat pizza dough.  A friend of mine in VT has Celiac disease and we ate gluten free wheat dough at Donny's frequently - she didn't have problems with it.

  • I agree that it's not really wheat.  It's something gluten free that approximates wheat dough.

  • Buckwheat does not have gluten, nor does corn or rice flour.  You can not extract the gluten from the wheat dough though so I am guessing it is "wheat".  You can always call and find out what they make it out of.
