WFD?

Another dinner I'm looking forward to....enchiladas!!  Chicken, peppers, corn, black beans and cheese for me, and chicken/cheese for DH.  And gaucamole for both. Yum!

Re: WFD?

  • My mom sent us home with Easter leftovers, so we'll be having that for dinner.  If we can't cook here, at least we can microwave some good stuff that mom made!

  • I think grilled chicken and grille dsweet potato fries. We just evicted a mouse from our grill which was very hard for me, but now I can't wait to grill! Hopefully we have propane. That would suck!
  • If I can get my act together, chicken saltimbocca. If not, then it's tortellini.

... it's totally going to be tortellini.

Ha, this made me literally lol.  What's the saltimbocca?

  • Saltimbocca recipe.  It's chicken with sage, proscuitto and mozzarella, in a wine sauce. I also add mushrooms to the sauce.  There are other recipes where you stuff the chicken/roll it all up and cook it, but I haven't tried them at home. (Though it's always good that way in restaurants. I just don't have the patience.)

Girlfriend, you make some amazing recipes! Bookmarking this! I LOVE prosciutto!!
  • Whatever my sister is having at her Pampered Chef party. Lance will probably be having leftovers from Easter. Nothing too excited around here.

  • Terriyaki stir fry. I've been looking forward to this all day.
  • We are just having simple spaghetti and garlic toast

That sounds really good!  I went to the grocery store during lunch to get a veggie tray and chicken salad for a sandwich during lunch.

While I was there, I bought their made-in-store tortillas (because I am incapable of going to this store without buying these - they are amazing!)...I really don't have anything to eat them with, but I couldn't pass them up.  And now I'm jealous that you can cook in your kitchen and could make burritos!

Oh - and how do you make your homemade salsa?

It was very good indeed!  I hope you get your kitchen back soon; that has to suck so much Sad

I chop up 1 large white onion, 1 large red/purple onion, a few jalapenos (depending on how 'hot' you like it), a bunch of fresh cilantro and a bunch of fresh tomatoes.  I also add in 2 cans of diced tomatoes w/green chilies, some lime juice, salt, pepper, dried oregano, and if they have it in the store a packet of 'salsa seasoning mix'.  I don't really measure anything, I just kind of eye it and taste it along the way.  It's always better once it sits in the fridge a day or two, I guess so all the flavors can blend together.  I had to make it a couple of times before I found the right amount of everything for our liking.  It ends up being so refreshing and yummy; we put it on everything from eggs, to salads, to burritos, and of course dip chips in it.  I typically spend about $15 on the supplies to make it, but it makes a giant bowl of it that lasts a long time for us.

I also have this chopper which makes it super easy to make...I use it for both of the onions and the jalapenos.  It saves so much time and the onions dont make my eyes water this way.  It's one of those 'as seen on tv' choppers, and is $20 at Target.

  • Xan - the salsa sounds delicious!  My best friend makes one that is similiar, and she's the same way - doesn't have exact measurements.  But she doesn't add the cans in (I assume Rotel?).  Thanks for sharing!

I have a vidalia slicer, too, and LOVE it!  My husband broke one of the corners one night chopping an onion.  It still works, but I'm hoping he'll get the point and buy a new one for me one day!  Until then, he will be the one to always chop the veggies :)
