I think that we have discussed this before but.....I need an egg salad recipe. I have some leftover eggs from Easter and I have been craving egg salad, SIL made some for Easter but I didn't like it. I am more of a Miracle Whip than a Mayo girl. Any suggestions??

hard boiled eggs
mayo (you can sub miracle whip)
diced green onions
little bit of mustard and/or wasabi
salt and pepper to taste
I recieved this in an email this morning. lol. Haven't tried it so I don't know- but it was mass emailed so it can't be horrible.
Here's my Bacon and Egg Salad that is slap your mama good!
Hard boiled eggs, chopped
red onion, chopped FINE
bacon bits (real ones, not fake-0 bac-o!!)
REAL mayo (no crappy low fat mayo!!)
sea salt and fresh ground pepper to taste)
It's all measured via your eyeball. I make it with 2 eggs minimum,
most likely 4 or 5 if I'm feeding more than one. :-) If you like tons
of bacon bits, go for it. Go easy on the onions (carbs...that's why
it's chopped FINE, lots of flavor without having to put a bunch in)
hard boiled eggs

little pieces of chopped dill pickles
salt and pepper to taste
I've been on an egg salad kick lately, yumm.
