Leftover ham recipe ideas?

Other than a quiche, fritatta or just eating the slices I can't think of anything interesting to do with this leftover spiral ham.  Any ideas?

  • I gave the bone to my Dad so he can make soup becasue I loathe pea soup. And, my MIL would disown me if I put ham in lentil soup. Ha!  Hmmm.......

  • Ingredients
    • 1 (1-ounce) slice white bread
    • 3 3/4 cups uncooked extra-broad egg noodles
    • 2 1/2 cups (1 1/2-inch) sliced asparagus
    • 1/4 cup all-purpose flour
    • 1/2 teaspoon dried thyme
    • 1/4 teaspoon salt
    • 1/8 teaspoon black pepper
    • 1 cup whole milk
    • 1 cup fat-free, less-sodium chicken broth
    • 1 tablespoon butter
    • 3/4 cup finely chopped onion
    • 1 tablespoon fresh lemon juice
    • 1 1/2 cups (1/2-inch) cubed ham (about 8 ounces)
    • 1/4 cup chopped fresh flat-leaf parsley
    • 2 tablespoons grated fresh Parmesan cheese
    Preparation
    • Preheat oven to 450?.
    • Place bread in a food processor, and pulse 10 times or until coarse crumbs form to measure 1/2 cup.
    • Cook pasta in boiling water 7 minutes, omitting salt and fat. Add asparagus; cook 1 minute. Drain.
    • Lightly spoon the flour into a dry measuring cup, and level with a knife. Place flour, thyme, salt, and pepper in medium bowl; gradually add milk and broth, stirring with a whisk until well-blended. Melt the butter in a medium saucepan over medium-high heat. Add the onion; saute 4 minutes. Add milk mixture; cook until thick (about 4 minutes), stirring constantly. Remove from heat, and stir in juice. Combine the pasta mixture, milk mixture, ham, and parsley in large bowl; spoon into a 2-quart casserole. Sprinkle with breadcrumbs and cheese.
    • Bake at 450? for 10 minutes or until filling is bubbly and topping is golden.

  • Ham and Swiss Baked Potatoe

    Ingredients

    • 4 baking potatoes (about 1 1/2 pounds)
    • 1 cup diced 33%-less-sodium ham (about 6 ounces)
    • 1 cup (4 ounces) shredded Swiss cheese, divided
    • 1/2 cup thinly sliced green onions, divided
    • 1/2 cup fat-free sour cream
    • 1/4 teaspoon freshly ground black pepper
    Preparation
    • Pierce potatoes with a fork; arrange in a circle on paper towels in microwave oven. Microwave at high 16 minutes or until done, rearranging potatoes after 8 minutes. Let stand 5 minutes.
    • Preheat broiler.
    • Cut each potato in half lengthwise; scoop out pulp, leaving a 1/4-inch-thick shell. Combine potato pulp, ham, 1/2 cup cheese, 1/3 cup green onions, sour cream, and pepper.
    • Spoon the potato mixture into shells. Combine 1/2 cup cheese and remaining green onions, and sprinkle over potatoes. Place potatoes on a baking sheet; broil 4 minutes or until golden.

  • Brussel Sprouts

    Ingredients

    • 1 (1-ounce) slice white bread
    • 3 pounds Brussels sprouts, trimmed and halved
    • 1/4 cup finely chopped country ham (about 1 ounce)
    • 2 tablespoons fresh lemon juice
    • 1 teaspoon olive oil
    • 1/2 teaspoon salt
    • 3 garlic cloves, thinly sliced
    • Cooking spray
    • 2 tablespoons grated fresh Parmesan cheese
    Preparation
    • Preheat oven to 425?.
    • Place bread in a food processor; pulse 2 times or until crumbly. Sprinkle crumbs on a baking sheet; bake at 425? for 5 minutes or until golden. Reduce oven temperature to 375?. Set aside 3 tablespoons toasted breadcrumbs, reserving remaining breadcrumbs for another use.
    • Combine sprouts and next 5 ingredients (sprouts through garlic) in a 3-quart baking dish coated with cooking spray, tossing to coat. Bake at 375? for 30 minutes or until sprouts are tender and lightly browned on edges, stirring twice.
    • Combine 3 tablespoons breadcrumbs and Parmesan cheese; sprinkle over sprouts. Serve immediately.

    2 Cups cooked shredded chicken breast 
    4 Tablespoons butter 
    ? Cup flour 
    ? teaspoon salt 
    ? teaspoon fresh cracked pepper 
    14 oz can chicken broth 
    3 Cups cooked rice of choice 
    1 Cup shredded cheddar cheese 
    1 Cup shredded mozzarella or swiss cheese  

    Preheat oven to 350 degrees F. Heat cooking spray in a large 5 qt rimmed skillet over medium heat. Saute onion until softened, about 5 minutes. Stir in garlic, ham and chicken. Cook for an additional 5 minutes. Melt butter then stir in flour, salt and pepper until combined. Slowly stir in chicken broth until well combined. Stir in cooked rice then transfer to a 9x13 inch baking dish. Top with cheddar and mozzarella cheeses. Bake for 20-25 minutes. Cover the dish with foil the last 10 minutes for oozing cheese.
