Sunday baking/cooking?

Make anything good? I'm making the strawberry ricotta muffins tonight. Has anyone made them without cooking the strawberries first? I seriously wonder if it's necessary, since you don't have to do it with other strawberry muffins recipes.

  • I baked Annie's Eats' raspberry swirl cheesecake cupcakes and S'more Pie from How Sweet It Is for Easter at my In-laws. Everyone loved them. Thanks to Angie for the recipe link! :)

  • I made a batch of the Guinness cupcakes this weekend.
  • I made caramel pecan rolls, a ham, potatoes au gratin, and green beans for Easter.
  • I made strawberry rhubarb pie that turned out amazing if I do say so myself. I also made some decent stir fry with yummy snap peas and baked tofu on Friday night and some baked potatoes for dinner on Saturday night. Nothing fancy but it was good to have some home-cooked food with DH after a few days of opposite schedules and disorganized meals.
  • I made a glazed lemon pound cake and will probably attempt some lemon ricotta muffins with the leftover lemons.

  • We were away this weekend so no cooking/baking for me. However, DH bbq'd a tri tip with a rub that included espresso grounds. It.was.heavenly.
