That sounds really good! I went to the grocery store during lunch to get a veggie tray and chicken salad for a sandwich during lunch.
While I was there, I bought their made-in-store tortillas (because I am incapable of going to this store without buying these - they are amazing!)...I really don't have anything to eat them with, but I couldn't pass them up. And now I'm jealous that you can cook in your kitchen and could make burritos!
Oh - and how do you make your homemade salsa?

I chop up 1 large white onion, 1 large red/purple onion, a few jalapenos (depending on how 'hot' you like it), a bunch of fresh cilantro and a bunch of fresh tomatoes. I also add in 2 cans of diced tomatoes w/green chilies, some lime juice, salt, pepper, dried oregano, and if they have it in the store a packet of 'salsa seasoning mix'. I don't really measure anything, I just kind of eye it and taste it along the way. It's always better once it sits in the fridge a day or two, I guess so all the flavors can blend together. I had to make it a couple of times before I found the right amount of everything for our liking. It ends up being so refreshing and yummy; we put it on everything from eggs, to salads, to burritos, and of course dip chips in it. I typically spend about $15 on the supplies to make it, but it makes a giant bowl of it that lasts a long time for us.
I also have this chopper which makes it super easy to make...I use it for both of the onions and the jalapenos. It saves so much time and the onions dont make my eyes water this way. It's one of those 'as seen on tv' choppers, and is $20 at Target.

Xan - the salsa sounds delicious! My best friend makes one that is similiar, and she's the same way - doesn't have exact measurements. But she doesn't add the cans in (I assume Rotel?). Thanks for sharing!
I have a vidalia slicer, too, and LOVE it! My husband broke one of the corners one night chopping an onion. It still works, but I'm hoping he'll get the point and buy a new one for me one day! Until then, he will be the one to always chop the veggies
