    I forgot about Tasty Tuesdays!  I actually wanted to post something like this yesterday but ended up doing other things around the house.  

    DH was such a sweetheart and made this delicious casserole for Easter brunch with his family (about 25 people).  I made it 2 years ago for Christmas morning brunch with our parents/siblings, and his mom asked me to make it for the Easter brunch... but she asked me Friday night (didn't have the ingredients).  Saturday I was able to go out and buy the ingredients but had to work 7PM that night until 7 AM on Easter Sunday.  Thus... no time to make the casserole with brunch at 9:30 AM at DH's aunt's. 

    It turned out sooooo good.  We actually used Challah bread both times instead of Italian bread.  

    We've actually had a little of the Challah leftover, and I have made myself "Jack Daniels" french toast the past 2 mornings.  Delicious!  [Just an egg, milk, cinnamon sugar/ground cinnamon, some vanilla extract and a capful of Jack since it's just me]

  • I made cheddar and chive buttermilk biscuits for easter. They were pretty good.

    2 cups all-purpose flour, plus more for the worksurface2 tsp baking powder1 tsp kosher salt1/4 tsp pepper1/4 tsp baking soda6 Tbsp cold unsalted butter, cut into small pieces4 oz extra-sharp Cheddar, grated (1 cup)2 Tbsp chopped fresh chives3/4 cup buttermilk
    Heat oven to 375?F. Line a rimmed baking sheet with parchment paper. 

    In a large bowl, whisk together the flour, baking powder, salt, pepper and baking soda. Add the butter and, using a pastry blender or your fingers, cut it in until the mixture is crumbly. Add the Cheddar and chives and toss to combine. Add the buttermilk and stir just until combined (do not overmix; the dough will be sticky). 

    Transfer the dough to a lightly floured surface and knead it a few times just to bring it together. Gently shape it into a 1-in.-thick disk. 4 Using a 2-in. round cookie cutter, cut out 16 biscuits (flouring the cutter and reshaping the scraps of dough as necessary). Place on the prepared baking sheet. Bake until the bottoms are golden brown, 15 to 18 minutes.

    I made this Sweet Potato Casserole for Easter.  It was very sweet.  Everyone said they really liked it though!  I've never had it before or made it, so it was a new experience for me :)

  • Lots of good recipes today!  I made my first quiche for Easter Brunch with our families.  It was a big hit.  Spinach and Bacon Quiche:

    Single pie crust for the bottom of the quiche.  Bake at 450 for 7 mins, then turn the heat down to 350 and bake 2-3 more mins.

    In a skillet cook 1/2 chopped onion and 6 slices of bacon till crisp.  Place on paper towels to drain the fat.

    Beat 8 eggs together in a large bowl

    Stir and add salt, white pepper and dash of nutmeg

    Add the onions and bacon

    Add 3 cups lightly packed, chopped spinach

    Add 1 1/2 cups each of shredded Swiss and Cheddar cheese

    Pour the egg mixture into the hot pie crust and bake at 350 for 45-50 mins. or until a knife inserted near center comes out clean. 

    Voila!  Quiche!

    I made something similar to bring in to work for breakfasts. I made mine without the crust (so it's basically a breakfast caserole) and I used ham instead of bacon. It's super tasty and so easy to make and then cut into pieces and freeze. Pop a piece in the microwave for about a minute and it's instant, easy breakfast!

    Vodka Sauce

    1 8oz can of Hunts tomato sauce

    1 8oz can of diced tomatoes

    1/2 cup heavy cream (or more if you prefer a creamier sauce)

    salt, pepper, oregano and garlic powder to taste

    1 shot vodka

    This can be made in either a frying pan or a pot, I find that a frying pan is easiest. Saute the diced tomatoes in a little olive oil and season with salt, garlic powder and pepper. Add in the tomato sauce, stir until warmed and then add the cream and vodka. Let the alcohol cook out of the sauce (i.e. bring the sauce to a bubble) and season with a bit more salt, pepper and garlic powder if needed. Enjoy!

    Yes, but if hubby doesnt like the chunks, you can just replace the diced tomatoes with extra tomato sauce! You may not need as much, so instead of 8 ounces of sauce and 8 ounces of tomatoes, you can use 10 ounces of sauce and maybe a little extra dollop of cream.

  • I made this at DH's request yesterday.  It was a bit of a challenge for my novice chef skills, but it turned out great.  The hardboiled eggs in the middle were neither here nor there.  Not bad, but didn't overly add to the flavor.

  • I have a couple actually so I hope you ladies don't mind.

    I made this for breakfast on Easter it's french toast casserole:

    1 loaf (16 oz) Cinnamon swirl bread cut into cubes (about 8 cups)

    6  Eggs

    3 cups of Milk

    2 Tsp Vanilla

    Confectioners Sugar

    In a greased 3-quart shallow baking dish( a 9x13 works) arrange bread cubes. In a separate bowl mix eggs, vanilla and milk. pour over the bread then cover and refrigerate(1 hour-overnight. My family does overnight)

    Uncover and bake at 350* for 50 minutes. Sprinkle the top with powder sugar. serve with Syrup.

    I also made this for Easter and am going to make it again for my teachers brunch at my pds school.

    Egg Casserole:

    1. Make 8 cheese sanwhiches (use old english cheddar cheese. It comes in a little jar) and butter both sides of the bread.
    2. Smoosh all 8 sandwiches into a 9*13 pan. Mix 6 eggs and 3 cups of milk and pour over the top of the sandwiches. Cover and refrigerate over night.
    3. The next morning  spoon on 1 can cream of mushroom soup, and 1lb crumbled bacon (I fry my bacon the night before)
    4. Mix 1/2 cup corn flakes with 4 Tablespoons of margarine and sprinkle over the top
    5. Bake at 350* for 1 hr 15min.
