Wisely and Slow (My Husband's Running Blog)
Last week I made a huge pot of spaghetti sauce, so we had baked ziti, chicken parm, spaghetti pie, thai food, and we bbq'd one night.
Today I have beef stew in the crock pot, so that will be today and tomorrow. Thursday is chicken roll ups (chicken with cheese and ham rolled up), Friday will be fresh kielbasa with eggs and hash browns.
Last night we had a shrimp stir fry. (Just shrimp, and a bunch of fresh veggies)
Other meals for the rest of the week are:
-Bar-b-que chicken and pineapple quesadilla ( We were going to have this tonight, but it may be too much of a pain to grill if it is storming out)
-Flank steaks stuffed with sun dried tomatoes and goat cheese on top of grits, with a side salad.
-Whole wheat pasta with swiss chard, roasted tomatoes and cheese (haven't decided what kind of cheese yet)
-Friday we are going out to dinner for our anniversary.
Tonight we're having pork loin (it's in the crockpot), corn on the cob and something else I haven't decided yet.

This past weekend I made a huge pot of chili and chicken marsala. Last night I made chicken spaghetti.
Some day this week I think I'll make the beef noodle bake thing from pioneer woman, also fried chicken and tacos are both on the menu this week.

Tonight--soft polenta with homemade meat sauce; salad
Tomorrow--fish tacos with mango pineapple salsa; salad
Thurs--grilled chicken breast on top of salad; french bread
Fri--possibly making DH eat tofu (which he is not a fan of) or possibly going to Outback with a giftcard to celebrate him being 100% done with his masters program!
Sat--tri tip steak/salad/french bread if we don't go to Outback on Friday, otherwise...the tofu!
Sun--orange chicken from Trader Joes with pineapple and green beans; brown rice
Your week sounds yummy! Might I suggest goat cheese with the pasta? Or, smoked mozzarella? YUMMMMMM
