Anyone have anything fun or especially tasty to make/look forward to for Easter Dinner?

  • Well I am going to try and make a bacon wrapped turkey. Should be interesting since I have never cooked a turkey before, let alone one covered in bacon! We are also having glazed carrots, roasted potatoes and maybe grilled asparagas. Should be good....I hope.

  • A ballpark hot dog for me this year! :)  DH and I are going to a baseball game Easter night.  Sounds like a great tradition to me -- we don't have to go to any lame family Easter crap, haha!

    The only thing about Easter that I Iook forward to is Easter candy!

    Please share the outcome!  We have a turkey in the freezer that's going to need to be cooked soon and DH would LOVE it if I incorporated bacon into his turkey!

  • We don't celebrate Easter but observe Passover.  Here's our menu starting from this past Monday through Tuesday of next week.  We have salads with everything and have quinoa with about half of it.

  • munkii, those sound amazing!! I'm putting a few of them on my list of recipes to try Smile

    We're having dinner at the IL's for Easter and I know MIL is making the traditional ham, but I'm not sure what else. I'm bringing dessert, and I'm going to make lemon cupcakes with a raspberry filling and buttercream frosting.

  • munkii - I am definitely going to have to try making that shakshouka... sounds SO GOOD!  Actually, I think I want to try all of those recipes!  

  • I;m working, so whatever I put in my lunchbox. I had the option of taking it off, but I don't have a huge family or small kiddos at home, so I decided to skip it, and not mess with my schedule.
  • Shoe leather.  Sad  ILs are making ham and they are firm believers in cooking all meat products to the dried out, hard as a rock point.  Oh boy.  Can't wait.

    Shakshouka is one of our favorites!  Her spice guide is good for your first time making it, but we crank up the cumin, garlic, and cayenne.  Plus, we add smoked paprika.  It's super yum with or without eggs, and is good with any carby-fiber source or without (brown rice, quinoa, toast, anything!).

    I was thinking of trying it with quinoa.  I'm actually so excited to try it, I may make it for Easter.  We're totally behind in meal planning this year, my mom just told everyone to bring something.  It will be a hodge podge of flavors I'm sure but I think I might bring it -- it's something I think we'd all like.  I'll take your advice with the extra spices too!

    That's what's facing us Monday when we go to MIL's. Cube turkey and burned everything else...even frozen veggies. How is that possible you ask. I wish I knew.

  • I didn't.  My kitchen is very small and I was already making hot cross buns and two other sides so I didn't have room it.  I am SO excited to make it though... I'll be making it soon for sure!
