I've got a bumper crop of arugula that needs to be harvested. Besides salad & arugula pesto, does anyone have any interesting ideas? Maybe for a soup or something?

I'm jealous of your bumper crop! We tried to grow it last year, but it was ravished by squirrels. I fear our figs will suffer the same fate again this year. We only got three all season!

I serve this on top of a bed of arugula. The peppery flavor balances nicely off of the sweetness of the apple/cranberry.
I use the Fresh 365 blog a lot for veggie recipes, and she has a recipe for spinach gnocchi that includes arugula, as well as a recipe for flatbread with gorgonzola, carmelized onions, and arugula. We just made the gnocchi recipe on Friday - it was tasty and surprisingly easy. I haven't tried the flatbread recipe, but it sounds good.

Oh, on pizza/in calzone is a great idea!
I just harvested 2.5 lbs and that's only about half of it. Plus young mustard greens (which, IMO, are just a spicier arugula at this point). Tonight will be arugula pesto pasta with sundried tomatoes and tomorrow I'll make a few different pizzas. I'm thinking about making a lemon-arugula compound butter for tea sandwiches for my wedding viewing (Martha had a watercress-lemon compound butter recipe; I'm thinking sub'ing arugula would be OK?)
