My BFF is in school to become a pastry chef and is currently working at a hotel to gain experience. She called me yesterday for help. She needs ideas for desserts for the Mother's Day brunch buffett (for like 1000 people). It needs to be something she can make in large quantities and is quick/easy to plate and serve. Anyone got something good they like to see on a brunch buffett?

My sister makes a mean peach tart thing. She makes up the recipe as she goes but I know google has served as inspiration for it many times.
I also think meringue cookies are great cause they are gluten free but can also be flavored with chocolate chips and/or colored to match the theme.
