It does sound good! I was thinking more chicken and veggies.
Add this to the list too..... with only making Mexican 1-2 times a month I am also no longer allowed to make any kind of homemade or frozen chinese food. Awesome.

I did not train Matt right early on in our relationship... so now I pay the price.
But we both come from families that ate at home almost every night and the wife always cooked, even while working full time. We grew up that way............ so I blame our parents. Yeah, that's it.

I will use creasent rolls or a store bought pie crust instead of making one. I will also thicken some Chicken Stock instead of using Cream of Chiken if I don't have any in the house.
Have you looked at any of the Philiy Cooking Cream recipes? Most of them are pretty good.

Someone on the nest posted weeks (maybe even months) ago about the skinnytaste blog. I LOVE it and there are some great recipes. You could even look up recipes by chicken, beef, pork, etc.

DH really liked Santa Fe Crock Pot chicken that I made.... I wouldn't call it mexican but I guess it sort of has that feel.

Easy and low cal:
(assuming your chicken is boneless chicken breasts)
pound the chicken breasts to however thick you want them.
coat them with eggbeaters
dip them in crunchy onions (those things you put on the top of green bean casserole)
bake for about 25-30min at 350
We usually make asparagus with this (which we bake with garlic pepper, grated parmesan and olive oil).

If we want chicken that isn't in anything, we like to roll it in panko bread crumbs that is mixed with ranch dressing mix and bake them. I need crunch to my "plain" chicken.
If you feel like pasta, I like to add chicken to either of these dishes. Except, we use Dreamfield pasta (low digestable carbs/high fiber) instead of wheat.
