I'm in such a rut. And it doesn't help that Carly's usually fussy around dinner time so things I can prepare in the morning and cook later are best, suggestions welcome! Thinking I might try Jackie's salmon patties today, but Carly's sleeping on me and I don't want to put her down, lol
Re: WFD?
I made this the other night and it came out really great. Crock pot is always great for us when Robert gets fussy and I don't have the time:
Buffalo Ranch Chicken:
Ingredients:
...
1 package of Ranch seasoning
1/2 bottle of Frank's Buffalo Wing Sauce
3-4 chicken breasts, thawed, cut in half
Directions:
Put all the ingredients in a crockpot.
Cook on high for 2 hours or low for 4 hours. (or until chicken is done)
Shred it up, Eat and enjoy!
I think I'm gonna make homemade pizza - JJ's a big fan. Last night was turkey burgers and fries.
That buffalo ranch chicken sounds so good though...I might make that this weekend.
Last night I made Mexican chicken:
b/s chicken breast seasoned w/ salt/pepper/cumin
put it in pyrex, drop salsa on top of it (mix w/ some water to almost cover the chicken), top with shredded cheese. Bake 30-45 minutes at 350 depending on thickness.
Serve w/ jasmine rice (seasoned w/ salt, pepper, cumin, chili powder)
Rinse a can of black beans and toss in with rice when it's done
and serve w/ a salad.
Tonight...probably meatballs & spaghetti w/ homemade sauce. I'm making it from scratch when I get home from my doctor appt (the OB psych that my OB referred me to).
I believe we are having Bass. Don't know how it will be prepared or what it will be served with, but I'm pretty sure fish will be the main course. Unless, DH is still at the lake catching more fish. In that case I'll scrounge up something for myself.
Amelia is going to be a big sister!
We put on hamburger rolls. I've heard of people using corn chips too.
That sounds really good.
I'm just making chicken breasts, barley, and broccoli (very boring)
