  • LOL, should've explained that but it was late and I didn't think about it!

    It's basically French toast, but made with matzos. 

    You do up the eggs like you would for French toast (I use eggs, skim milk, salt & pepper) in a bowl, then dampen some matzo (I basically use one matzo per egg, same as I use one bread slice per egg for French toast) with water slightly, shake off the excess water, crumble it into the egg bowl, mash it around, and then slide it into a frying pan where butter's already melted. 

    Cook it up until all the egg is solid and there's no more wetness or mushyness.  I continually press it down and break up the pieces and flip them over so it all gets somewhat browned and it stays in separate pieces so it's easier to eat, rather than one big matzo omelet.

    I eat it plain after that, but mom likes salt on it and dad likes sugar.  I'm one who eats my French toast totally plain, though, too.

  • FRIED MATZO.

    I lived on this last week.  I like to break it up so it's not solid and the pieces are really crunchy.

    I also like putting salt, pepper, and strawberry jam on it.

    I do not want any until next Passover.

  • LOL, I'd only had it once last week & I still have a ton of matzo, so I was really kind of wanting it last night.  I still haven't made matzo meal pancakes this year.  Maybe tonight's dinner.
