Cinco de Mayo party ideas?

We'll be making Carnitas and home made tortillas for the entree.  Anyone have any good suggestions for sides?

I was thinking Mexican corn casserole but am drawing a blank for anything else.

 Salad ideas?

  • You have to have homemade guacamole or salsa.
    What about spanish rice with lime or I like to make black beans tossed with diced red onion, cilantro and lime and olive oil.
    I love corn casserole so I would make that too.
    For dessert you can make churros.

  • I don't know if these would be too similar to your main dish, but at least the protein is different... and they are amazing!

  • At Mexican restaurants, I usually have a salad b/c I love all the toppings that give it a good bite.

    I think you can have a pretty simple salad:  greens, tomatos, corn, beans, shredded cheese, salsa (instead of dressing), guacamole, tortilla strips (instead of croutons).  You can set this up as a salad bar so people can build their own.

    If you can get your hands on a pinata - that will definitely be a great way to get the crowd mingling.

    P.S.  Don't forget the limes - for the coronas and the tequila shots.  I always forget to buy limes!

  • If you wanted something healthy, you could do an avocado side salad...its kind of like guacamole but not smashed up, so you can eat it with a fork. dice some avocados and tomatoes and onions in large chunks and serve with a little lime squeezed on top. The Carnitas sound DELISH!  I also have a few fun cinco de mayo drink recipes on my blog of your looking for drink ideas!
