I signed myself up to host a Mother's Day brunch. I've never hosted a brunch before. What should I serve? Recipes appreciated.

Re: Mother's Day Brunch
How many people? I love brunch...
keep it simple. Overnight french toast casserole, overnight egg casserole, you can just pop both in the oven in the morning.
Add in some homemade muffins or bread, maybe a fruit salad and some mimosas and viola!
Creme Brulee French Toast
What You'll Need:
1 Stick Butter
1 Cup Light Brown Sugar
2 Tablespoons Light Corn Syrup
5 Large Eggs
1 1/2 Cups Half and Half
1 Teaspoon Vanilla
1/4 Cup Grand Marnier
1/4 Teaspoon Salt
French Bread, Cup into 1 Inch Slices
In a small sauce pan combine and melt down butter, brown sugar & corn syrup {on medium heat}. Once melted, pour on the bottom of a 13x10 baking dish.
Next, cut 1 inch slices of French bread, trim crusts and layer in baking dish. I use enough to cover the bottom of the baking dish {approx 8-10 pieces}.
In a separate bowl, whisk together eggs, half and half, vanilla, Grand Marnier and salt.
Pour mixture evenly on top of bread in baking dish.
Let sit for at least 8 hours or overnight in refrigerator.
Pull out baking dish from refrigerator and let get room temperature before baking. Preheat oven to 350 degrees. Bake uncovered for 35 to 40 minutes.
*Note: this recipe is best when kept overnight and cooked off the next day
This is from my friend, and fellow Nestie's, blog. Her dad owns a restaurant and he is a FAB cook.
It was going to be about 15, but MIL is working until 3, so now it's just my family. So, there will be 6 of us.
We make it easy and just go out for brunch.. lol
Waffles are a must.
That's our plan.
Or, if anything, make it a potluck so that not one of us is stuck with 100% of the cooking.

Yeah, after a brunch bill that way waaaayyyy too high last year and an impatient father who hates needing to wait to be seated, we decided we'd use the excuse to use our new fancy dining room, again.
We have the waffle maker - so, I was definitely thinking of making a batter and letting people make their own waffles.
These are a little more work, but since it's only 6 people...I saw these on tv and I've been dying to make them! They look sooooo yummy! She does the potatoes from scratch - but you could definitely buy frozen ones!

Oooo you could make a Cheesy potato bake.. yum.
Brunch is my favorite! These are my brunch favorites (we usually do buffet brunches)
If you've got the waffle iron do waffles with all the fixin's; quiche is always nice or you could do an egg casserole in a crockpot (I've got a few recipes); a small meat and cheese tray; shrimp; muffins or bread; bacon/sausage; small assorted desserts.
I ditto a french toast casserole, cheesy potatoes, and some type of egg dish.
I make a break fast casserole by layering a 9 x 13 pan with crescent rolls, and mixing eggs, cheese and diced ham. Pour egg mixture over crescent rools. Bake 20 - 25 min. You can add diced onions and pepp if you like.
You could also do mini quiche with Athenos phyllo cups - so easy and they are lighter.
