Really easy, and if you need meat, I bet it would be good with grilled chicken or shrimp on top.

  • Oooh keep 'em coming.  This is great gals, thanks!

MrsReem - Sams Club Crust?  Tell me more!  Is it frozen?  Pre-baked?  Does it come in major bulk or just 2-3?  I need a good crust (since all of mine are flops).

December - What's your recipe for basil grilled shrimp?  That sounds awesome.

  • LOVED this chicken enchilada casserole from Iowa Girl Eats:

We used Chi Chi's Sweet Corn Cake mix instead of regular yellow cornbread mix.

It's so yummy! I haven't been able to make a homemade crust as well either. It's fairly thick, but light. Not heavy. It's frozen in packs of 15 (18?) as round discs. You have to pre-order it at the little fast food place in front but it's worth it. I made a bunch of pizzas for the superbowl and people kept asking who delivered. ;)

  • Oh and here's one on deck that I want to try but haven't. It's definitely "different."

French Fry Deluxe Salad (food network)

    • 3 cups frozen curly french fries (about 9 ounces)
    • 4 strips bacon
    • 1 tablespoon yellow mustard
    • 3 tablespoons chopped dill pickle, plus a splash of pickle juice from the jar
    • 1 1/2 tablespoons ketchup
    • 3 tablespoons mayonnaise
    • 1 1/2 tablespoons malt vinegar
    • 1/4 teaspoon sugar
    • Kosher salt and freshly ground pepper
    • 1 cup grape tomatoes, halved
    • 1/4 cup thinly sliced red onion
    • 2 romaine hearts, torn
    • 1/4 cup shredded sharp cheddar cheese
    • Toasted sesame seeds, for topping (optional)
    • Bake the french fries as the label directs until crisp. Let cool.

    Directions

Meanwhile, heat a large skillet over medium heat. Add the bacon and cook until crisp, about 4 minutes per side; transfer to a paper towel-lined plate. Cool slightly, then break the bacon into pieces.

Make the dressing: Whisk the mustard, pickle, pickle juice, ketchup, mayonnaise, vinegar, sugar and 2 tablespoons water in a large bowl. Add 1/4 teaspoon salt, and pepper to taste.

Add the french fries, bacon, tomatoes, red onion, romaine and cheddar cheese to the bowl with the dressing and toss to combine. Season with salt and pepper. Divide the salad among bowls. Sprinkle with sesame seeds, if desired.

  • I made a new pulled pork recipe last week and it was easily the best pulled pork I've ever had. It was soooooo good! I used the leftovers to make a BBQ Pork Pizza and BBQ Chicken Burgers - both were very good. The pulled pork recipe is on my blog and the other 2 recipes were from Pink Parsley's Blog: http://pinkparsleycatering.blogspot.com/

I made "grinders" tonight with mostly leftovers and very little effort. I browned up some Italian sausage (the one ingredient I had to go buy), added some pasta sauce and a little water and let it reduce. Put it on hotdog buns with a slice of provolone on top. Nicholas ate his in a soft tortilla.
  • I made ranch burgers topped with gaucamole the other night, last night was just grilled chicken w/ sweet potato and broccoli.

    lasgna w/ salad & GBread

My new favorite is to: bake chicken , put peppers & onions on the bottom, squirt a little IT. Dressing on top, bake, then when there is like 5min left, top w/ shredded parm cheese YUMMY! H & I LOVE this!
