Looking for a cheesy potatoes recipe

Does anyone have a tried and true recipe for cheesy potatoes or au gratin potatoes that they could pass along to me?  There are so many to choose from online.

Ideally I'm looking for something that I can make ahead for a get together.  I'd either throw it in a crock pot, or just pop the casserole dish into the microwave for reheating if necessary when I get to my destination.  The option is there for me to take and bake it there too, I just thought it'd be easier if it was all done when I arrived.

  • Here is the recipe that my family always uses.  It isn't gourmet or healthy but it so good.  Mike's family has repeatedly requested that I bring potatoes for his family holidays now. It is super easy to throw everything together and bake before going.  A little time in a hot oven when you reach your destination would be good to warm it up, but this recipe holds really well:

    • Bag of frozen chopped potatoes (not sure the size but I think 32 oz.)
    • 1 cup chopped white onion
    • 1 stick of butter melted, divided
    • 1 can cream soup (chix or mushroom)
    • 8 oz. sour cream
    • 8 oz. shredded cheddar
    • About a tbsp of Lawry's seasoning salt
    • tsp salt
    • tsp pepper
    • 2 cups crushed cornflakes

    Mix 1/2 butter,  all soup, cheese, sour cream and seasonings. Stir in onion and potatoes. Spread in buttered 9x13 baking pan. Stir cornflakes into remaining butter. Sprinkle over potato mixture. Bake at 350 for approx one hour or until hot and bubbly.

  • I have one for "heart attack potatoes" as we call them :)

    Cubed potatoes, boiled until tender but not too soft. 
    1 block velveeta cheese, cubed.
    1 jar sliced green olives
    1 pkg bacon, cooked and chopped.
    Mayo

    I usually cook the potatoes then toss the cheese, potatoes, olives, and bacon in the crockpot and mix.  Then I add mayo to get the consistency I want.  Usually a cup or two, depending on how many potatoes you use.  Then cook on low 4-6 hours or on high 2-3.  

    SO unhealthy but SO good :)

  • Crunchy Onion Potato Bake

    I made these for dinner awhile ago and really loved them. 

    You could make the whole thing, and just hold off on baking it till you got where you were going.  Not hard to make at all.

    This is the one I use - only my son likes it with hash browns.  Sometimes I skip the cornflake topping and put extra cheese right on top for the last 5 or so minutes.
