F/U to DS post...

Sorry I didnt have time to respond to the questions about DS' diet last week. Work got really busy, then DH & I went out of town. I thought I would make a new post since that one is kind of old.

For a breakdown, DS could not eat any processed foods at all for two weeks, then one week at at time, we will introduce a new food "group" and monitor his behavior. Since the forbidden foods were most of his favorite things, it was really hard at first to make him see that he could still eat good things, we would just have to be more creative in making them.

So, for the first two weeks, he could not eat processed flours or refined sugars, thickeners, food coloring (except natural extracts), foods that include any kind of dietary supplements like added vitamins, or any kind of preservative. Let me tell you, there is one of the above items in sooo many things. We are lucky that we are near a Whole Foods, but I had to keep our budget. So we got really creative.

I made some great sandwich bread and home made granola bars & my dear mom made him some homemade ketchup, mayo and breakfast sausage. (once he had access to his favorite condiment, ketchup, he was a much happier person). His lunches were really the hardest thing, because usually he had something like a turkey sandwich, pb&j or some bagel bites- all things there were now off limits. We could eat corn tortillas, pita bread & my homemade bread, so he had lots of natural pb& honey, hummus & cucumber, and plain cheese sandwiches. Breakfast was a big batch of eggs that I scrambled with veggies & cheese on Sunday, that he could heat up in the am.

The third week, we introduced bread (whole wheat, with as few ingredients as possible) and cerals like Kix, Rice Krispies, Cheerios, etc. But by now, he has kind of gotten used to what he can and can not eat. We let him have some candy on Easter, and he went to a pizza party.

Overall, he says he feels more clear headed and has more energy since starting this way. I fully intend on limiting preservatives in general for as long as I can, as I feel better eating this way as well.

I can answer any other questions you might have, but that is the general gist of what has been going on.

  • The things you do for love, huh? What a huuuge adjustment! That sounds like a lot of work and diligence on your part.  Your son is so lucky to have an awesome mom like you to continually advocate for him and take on such a challenge like a major diet change.  And good for him for committing and realizing what a difference it makes!  I'm so glad you've both seen positive results since the change.  Go you!!

    i was wondering how he was doing, so thanks for the update.  i am glad to hear he is feeling better.

    on a not so related note... i'd love to take you up on the walking invite.  do you try to do it at a regular time, or whenever you can?

    I heard a story about this diet a while ago on NPR. Pretty interesting stuff. Man, there's so much crap in our food, isn't there? 

    Anyway, glad things are looking up for you guys. You both deserve it.

    This is what I was thinking too. I guess these are things we should all try to eliminate from our diets! Glad to hear things are going well for you guys.
