I want to see if a trip to Maui is affordable for us later this year but feeling a little overwhelmed with all the travel sites. Which travel sites you do you think have the best deals and when is the best time to book hotels/flights - do you get better deals if you book in advance or last minute?

We travel a lot - and usually find trips to Hawaii to be the most affordable (not to mention hassle free) through Costco Travel.
I would strongly suggest you start there.
I was actually thinking of October or November b/c kids will be back in school, glad to hear its off season.
For some reason, I never think of using Costco and have never used them even though were members. I'll check it out now, thanks!
I usually find that I can do better booking things separately than with a package deal. But then I like researching and booking everything.
The last time that we went to Hawaii I used kayak.com to book the flights and found our condo rental on VRBO.com (vacation rentals by owner).
Typically I will monitor flight prices for a couple of weeks to get a sense for how much it should cost. You can set up alerts on Kayak (and any number of other travel sites) to monitor specific travel dates and they'll send you an e-mail daily.
I use TripAdvisor to find hotels that I might like and to get a sense for their pricing. Then I'll go to Hotels.com, the hotel's own website, etc. and see what the best price I can find is.
I tend to book each piece of a trip by myself, often because I find that I don't like the hotels that are attached to packaged deals. But my research helps me know a good deal when I see one and I wouldn't be opposed to a package if it lowers costs. Most travel sites, airline sites, etc. offer packages you can look into as well.

To monitor flights, I use kayak or bing travel.
As for hotels, I recommend getting one of the Wizard Publications Maui Revealed books.
For Hawaii, Pleasant Travels (pleasanttravels.com or something) is a good travel agency that can get really nice deals.
I find that travel agents can often get better deals on hotels or rental cars if there's something specific you want (e.g. a Jeep with an open top). Otherwise, I just do the priceline for hotels and cars.
